Ever notice how our feelings seem to be attached to the seasons? Our moods, attitudes – spring is for cleaning, summer is for lazy days and fall seems to be for preparation for winter and the upcoming holidays. This season comes with tons of work and preparation to be done. We have been so busy with work here and with Halloween now over, it’s a downward slide into Thanksgiving and Christmas. As this season of after school activities and sports continue to come at us full force I need a weeknight solution that will allow us to get all of our stuff done but something that is hearty to fill our bellies.
For me that is turning to the crockpot. The crockpot or slow cooker is an amazing invention. You can literally put something in there in the morning and by dinner you have a nutritious, delicious meal with little effort. It’s all about quality. If you start with great quality ingredients your finished product will be delicious. My favorite and most versatile cut of meat to cook in the crockpot is a beef roast.

Actually, my favorite meat to cook and eat is beef. Beef has high-quality protein, iron and B vitamins to help keep us going strong and staying active all year-long. After looking through this beautiful new website I was certainly inspired. I decided to make a chuck roast and cook one of our favorite meals, Barbacoa.

3lb Beef chuck roast
1 chipotle pepper
1 4oz can of green chiles
1 Bay leaf
1/2 cup of chopped cilantro
1 tbs of chili powder
1 tbs of chopped garlic
1/2 tbs of cumin
1 diced onion
4 cups of beef stock
Place all ingredients into slow cooker and cook on high for 4 hrs.
We really enjoyed this meal! Serve in warm tortillas with pico de gallo or any of your favorite taco toppings! This is a very versatile dinner and the leftovers are amazing!!! Enjoy!!
