What’s not to love about shortbread? With 90% butter and only 5 ingredients how can you go wrong?  These easy, melt in your mouth cookies are sure to cure any sweet tooth in a hurry! These are perfect for simple end of the summer desserts!

Cream Cheese Shortbread Recipe
 
Ingredients
Shortbread
  • 1 cup + 2 Tbsp room temp butter
  • ¾ cup powdered sugar
  • 1 tsp vanilla
  • 2 ½ cups flour
  • ¼ cup granulated sugar for coating
Icing
  • 1-8 oz. package cream cheese room temp.
  • 1 stick butter room temp.
  • ½ tsp. vanilla
  • 3 cups powdered sugar
Instructions
Shortbread
  1. Preheat oven to 350
  2. Mix butter and sugar until smooth. Add, vanilla and mix to incorporate. Add flour slowly and mix just until the dough is combined. Roll batter into ½ tbsp balls and coat with sugar. Place balls into mini cupcake tin and press center down with thumbs.
  3. Bake for 8-10 minutes. Just until cookies are cooked through!
Icing
  1. Mix cream cheese and butter together until smooth (Make sure they are at room temp when you begin or you will get lumps in your frosting) add vanilla and powdered sugar 1 cup at a time until fully incorporated.
  2. Top cookies with cream cheese frosting and garnish with fresh berries and mint leaves if desired.
