Do you ever have something that you keep going back to over and over? I tend to get stuck in food ruts, but this one is a good one to get stuck in. I love our Salsa Verde. It’s so good, with roasted tomatillos, onion, cilantro, garlic, lime and salt. It’s really that simple and oh so good.
I start this delectable recipe by roasting off all the veggies with a little oil and salt and roast them until they are golden. This develops the sugars and they become roasty sweet. Mmmm. Brown food is good food, repeat it with me, brown food is good food. One of my biggest pet peeves with my food videos or an inpatient hubby is people don’t let their food brown. Let it brown, it only enhances the flavor. We tend to go full on Mexican a lot in this house and let me tell you this condiment goes with everything and it doesn’t last long. It’s wonderful on egg, burgers, tacos, chips, everything.
I will often make this at the beginning of the week, and do a little meal prep so that we have it all week long. This week I wanted to change it and twist it so I decided to make Creamy Salsa Verde. Now I suppose that you could use several different avenues to make this creamy, but I chose the other love in my life, avocado. We heart Guacamole, and all things avocado. Yummo!! I knew that blending these ingredients together would make a spicy tasty treat sure to please the masses.
We often are so busy that its hard to not go out. As a family we try not to eat out a lot, its expensive for a family to eat out a lot. But we do need quick at hand meals. There are some great store bought items that can help with those quick afternoon errand runs before dinner, or get you through soccer practice. - 10 Tomatillos
- 6-8 cloves of garlic
- 3 jalapeños
- 1 onion
- 2 tbs of oil
- 1 bunch of cilantro
- 2 avocados
- pinch of salt
- juice of ½ lime
- Halve tomatillos, and onion
- Place all veggies on sheet tray
- Toss in 1 tbs of oil and place into oven at 375 and bake for 30 minutes
- Place roasted veggies in the blender of food processor and puree
- Add in cilantro, salt, juice of ½ lime and avocado and puree until smooth
