It’s been a wonderful Christmas season. We have laughed, loved, given and received. We have also had lots of family dinners. The time of indulgence has come and now gone. Even now as an adult I still love making this soup. This soup is so versatile and you can change out the veggies for whatever are your family favorites are. I would challenge you to keep in the things like the kale because this soup is so flavorful it can handle a strong vegetable like kale or even spinach. You can add any broth to this soup but I think that Beef works best. It gives you all the flavor of beef while also giving you all the goodness of the veggies. Putting all these veggies into your system is the perfect way to detox your body after the oh-so-indulgent holidays.

Easy Detox Soup
Prep time: 15 min Cook time: 2-3hrs
2 tbsp olive oil
4 cloves garlic
1 tbsp of fresh ginger, chopped
1 cup broccoli florets
1 large carrot, sliced
1 red bell pepper, sliced
4 chopped green onions
3-4 mushrooms, sliced
1 parsnip, sliced
2 cups of water
1 cup of cauliflower florets
1/2 cup of red cabbage, chopped
8-10 cherry tomatoes
Salt and pepper to taste
In a slow cooker add all ingredients and cook for 2-3 hours on high. Then add greens, cabbage and tomatoes and cook for another 30 min. Ladle into bowls and serve! Enjoy!
