I don’t think anything says Christmas time like eggnog. It’s a polarizing food – you either love it or hate. I didn’t realize until I was much older that people actually make boozy nog. Hmm, now I can get behind a treat like that. There’s just something so comforting about the warm spices in the eggnog and the creamy texture. From the first smell that hits your nose as you bring the cup to your mouth, this smell, taste and texture has the power to transport you to many Christmases past.
My favorite things about winter are fireplaces, being cozy, sweaters, boots and snow!!!! I love the snow, Christmas lights, and decorations. I could probably keep going on for a while about all the things I love about the Christmas season. We love to get together to exchange Christmas presents, we sing, read stories and poems. Everyone has their own special dishes that they make, contributing something to the table. In our family one thing that everyone loves and looks forward to is the eggnog.
When I think of eggnog in my childhood memories I always picture the traditional punch bowl with a ladle and the adults scooping some into glasses. I wanted to take eggnog and spin it on its head a bit. One of my favorite desserts we had at Christmas time growing up were cream pies. I wanted to make a simple and Easy Eggnog Cream Pie.
I love shopping at ALDI because I know I can shop there for less and I have come to expect amazing quality from ALDI brands. The ALDI eggnog is awesome. To make the crust I knew the perfect seasonal cookie available at ALDI from the Winternacht line, were the Spekulatius Spiced Cookies. ALDI has an amazing line of German sweets around the holidays. ALDI has its roots in Germany, and during this time you get to try some sweet confections straight from Germany. We may have indulged in one or many of them, I can tell you they are delicious. Definitely, give these a try while they are around!
This cookie is a German spiced cookie that has many of the same spices and flavor profile as eggnog. To make this super delicious and easy, I grabbed some vanilla pudding, whipped topping and heavy whipping cream. All of these things combine to make a delicious treat.
I love that I can try out new recipes and experiment with the dishes we love and make them into something completely new. ALDI allows me to be creative because of the prices but also their quality as well. Often times it’s the quality of the ingredients that can make or break a dish.

Prep Time: 5 min Cook Time: (freeze) 2-4 hrs Serves: 6-8
2 cups of Friendly Farms Fresh Eggnog
1 package of Baker’s Corner Instant Vanilla Pudding Mix
1 container of Friendly Farms Whipped Topping
1 bag of Winternacht Spekulatius Spiced Cookies, crushed (1/4 cup reserved)
1 stick of Countryside Creamery Butter, melted
1 pint of Countryside Creamery Heavy Whipping Cream
1/2 cup of Baker’s Corner Powdered Sugar
Mix crushed cookies and butter together. Reserving 1/4 cup of cookies for sprinkling on top of finished pie. In a large mixing bowl, combine the box of pudding and eggnog together. Then add in the container of whipped topping. In a 9 inch springform pan, press the crust into bottom of pan. Pour pudding mixture over crust. Freeze for 2-4 hrs. In a large mixing bowl, whip heavy whipping cream and powdered sugar until it has firm peaks. Spread whipped cream over pie. Dust with remaining cookies
