One of the greatest pleasures I have in life is the privilege to cook for my family. Cooking has always come second nature for me, I truly love putting my heart and soul into the meals I create for my family. I love making people’s hearts and stomachs happy, it brings me great joy to see my loved ones enjoying what I have cooked for them. It’s also usually a part of their gifts for birthdays or special occasions and I just love doing it. I may not always enjoy cooking meals for them, but at this time in my life I do.
Recently, I had the pleasure of preparing a special dessert for my dear sister-in-law Jinhua. I first remembering hearing about Jinhua from my brother-in-law Cliff (her husband) when he was in college and home for Christmas vacation. He kept going on and on about his Korean friend Jinhua, who was just the most beautiful and amazing woman. He could not stop talking about all her amazing qualities. I knew it wouldn’t be long until they were dating, and she would eventually be part of the family. From the moment I met her, she has shown herself to be one of the sweetest, kindest, and truest people I have ever met. She is very genuine, and really cares about people. It has been an adjustment for her into the loud Engels clan. Jinhua wasn’t very used to our volume level, or the heated debates the brothers get into but now almost 8 years later, I tell you that Jinhua gets involved in those discussions, and she has wholly embraced being an Engels! We love you Jinhua!
Jinhua’s birthday happens to be the same day as my wedding anniversary, so I have absolutely no excuse if I forget it! LOL. The Engels are very good at getting together and celebrating each other’s special days. My wonderful mother-in-law is usually on deck for desserts. Right now they are in the middle of trying to sell their house so she is very busy. One of her best desserts that she makes is Tiramisu. It’s soo good. This happens to be one of mine and Jinhua’s favorite desserts. This year Jinhua asked if I would make her dessert so that our mother-in-law could focus on getting their house ready to be sold. I knew I couldn’t hold a candle to her creation, so I decided to go outside the Tiramisu box and make a delicious Gelato Tiramisu.
Excited yet? Boy I was just thinking about it. Who doesn’t love ice cream? Gelato isn’t just ice cream its the creamiest, most decadent Italian frozen treat. I quickly came up with a recipe and headed to Kroger to get the ingredients I needed. My favorite gelato is Hemis Fares brand and they have just the flavor I need for the Tiramisu, cappuccino. Tiramisu is a coffee dessert, so I knew this gelato would be perfect for what I needed. Hemis Fares brand has shown itself time and again to be quality. I love that I can get everything that I need at Kroger. I grabbed some lady fingers (Italian cookies), Kroger brand heavy cream, Simple Truth chocolate chips, and Simple Truth chocolate bar to shave on top. Yummo!
I came home and whipped the heavy cream, while whipping the cream I sat the 2 containers of Hemis Fares Cappuccino Gelato out so it could slightly soften. After the heavy cream was finished I added in both containers of gelato to the whipped cream and mixed with the and mixer until incorporated. The lady fingers are traditionally dipped in espresso and line the cream in-between the layers. I added a layer of chocolate chips on the bottom and in-between each layer. End with a layer of cream and shave chocolate on to the top using the bar of chocolate and a vegetable peeler.
This was a hit with the whole family. Super easy to make, and with Hemis Fares Gelato being great quality, I knew it would be a delicious special treat for Jinhua’s birthday. The smooth and creamy texture of the cream against the lady fingers and chocolate chips, proved to be a decadent dessert that the birthday girl loved! Head to Kroger and pick up these great Kroger ingredients to make Gelato Tiramisu.
Recipe type: Dessert
- 3 containers of Hemis Fares Cappuccino Gelato softened
- 1 quart of Kroger brand Heavy Cream
- ⅓ cup of powdered sugar
- 1 package of Simple Truth semi-sweet chocolate chips
- 1 bar of Simple Truth Chocolate for chocolate shavings
- 2 packages of lady fingers
- 1 cup of espresso coffee chilled
- Set out gelato and allow it soften on the counter for 5 minutes. Pour all of the heavy cream into a bowl and whip until firm peaks have formed. Add in the gelato, and powdered sugar and beat until incorporated. In a long container pour the espresso. In a 9x9 pan place part of the chocolate chip in the bottom of the pan, follow with cream mixture. Turn the lady fingers, one at time, over in the espresso and layer on top of the cream. Repeat until all ingredients are used ending with a layer of cream on top. Using a vegetable peeler, shave some of the chocolate bar on top. Freeze for 1-2 hrs or overnight. Enjoy!
