In my house, we believe that living better is a made up of small choices. We are always on the lookout for fresh produce and buying good quality products that fit into a busy life. If you have ever tried coconut water you know that it’s refreshing and has a sweet almost nutty taste. I buy Vita Coco, which is available at Walmart.
While sitting chatting with my wife on afternoon, I saw her eating fruit and peanut butter. She had he Vita Coco on the table, and I wondered out loud, is there something better than peanut butter to put on that fruit? She said we could make could try to make coconut butter. I chuckled, is that even a thing.
Ummm. Yea, it’s a thing.
So here’s the deal. It’s super easy to make, you can make it in about 3-10 minutes depending on the quality of your mixer. If you’ve got an industrial Ninja, you’ll be done in no time, but a regular stand mixer might take a little bit longer. Head to Walmart and grab some shredded coconut. We got unsweetened for just under $2, but you can get the Great Value sweetened bag for under a $1.
Then go home, but a bunch in your mixer, and pulse it a few times. Scrap the sides off and then pulse again. Repeat this a few times, then let the blender run for a minute. If it’s starting to get to the desired consistency, you won’t need any coconut oil, but if it’s still a little clumpy, add a teaspoon of coconut oil (if you don’t have coconut oil, just add a little oil you have in your pantry) to help it along. Soon you’ll have a nice buttery consistency. As it cools it will harden, just like the butter we all love, with heat it softens.
Today, I grabbed some fresh fruit from Walmart, added some homemade coconut butter, topped it with some nuts and a little bit of shredded coconut and bam, a delicious snack made in under 5 minutes. Add in a Snapple, Vita Coco or Bia5 and I’ve got a perfect snack for any time of the year.
We always keep the refrigerator stocked full of Vita Coco, it’s a great way to stay hydrated with real natural ingredients. If you haven’t tried the new Snapple Straight Up Tea Unsweetened, I also highly encourage it.
So, as I’m putting up the coconut butter, my wife dips her finger into the jar and say “I wonder….” And rubs it onto her skin. Now I’m no beauty expert, but hey, it appears to even have some skin care properties.
