It’s here, it’s finally here!! Pumpkin season, pumpkin everything! The season of sweaters, boots and jackets! But please no pumpkin coffee for me. I just lost my white girl status! Ha! I could eat pumpkin flavored thing all year round, but now is when pumpkin becomes easier to find in the stores, and it becomes socially acceptable to have all the pumpkin, all the time.
I have loved pumpkin pie from way back when I was a little girl. Now, not too way back, but its been a while. My Mom on the other hand has never liked pumpkin pie. I kept begging every Thanksgiving, for her to puhleeeease make me a pumpkin pie. You know how annoying kids can be. I mean did not give up, I was, and still am quite persistent. So she gave him and let’s just say attempted to make a pumpkin pie.
If you have ever bought pumpkin, you know that it comes in two varieties, 100% pure pumpkin, and pie ready pumpkin. Both are good products, but the 100% pure pumpkin requires all the stuff to turn it into a pie. Guess which one my mom bought?? You got it, pure pumpkin. So my Mother, Bless her heart, took her store bought pie shell, and poured in the 100% pure pumpkin and put it into the oven. I was so excited. She was so proud. At dessert I took a slice and promptly put a huge dollop of whip cream on it, and I took a big ‘ol bite. I expected a spicy, sweet pumpkin pie taste, what I was met with was plain canned squash taste. I told my Mom it was great! (I lied) My Nanny went for a piece and I whispered to her, Nanny it’s not good, something is wrong!! LOL
That story is still one I tell today, and now its looked back on as a very fond memory. But as I sat thinking one day, is I need a pumpkin recipe that is so good, and so easy that even my baking challenged mother can do it. That my friends is how pumpkin fluff was born.
When you need that quick pumpkin fix or want to impress your friends and family this recipe will please a few or a crowd! Give it a try!!
