Growing up in a rural community I knew that with the cold crisp air came those yummy root vegetables. My favorite root vegetable by far are sweet potatoes. I know that sweet potatoes over the past few years have become rather the urban posh food. But we have been eating sweet potatoes different ways for years, we made them into fries before that was cool. I just love sweet potatoes even baked simply with nothing on them.
I always over buy on the sweet potatoes. They are more dense than a white potato and so there is a lot more potato to be had in one sweet potato. I still haven’t quite gotten the correct ratio down even as long as I have been eating them. But that doesn’t stop me from making a killer sweet potato casserole at Thanksgiving. So what do I do with my leftover sweet potatoes that are uncooked? They will literally last forever in the fridge. But over the years I have come up with a few tips and tricks.

One of the tips and tricks I have learned with sweet potatoes is to cook them in the toaster. Yes, you read that correctly, the toaster. You slice the potato lengthwise and about as thick as piece of bread and set the toaster to the highest setting and toast the sweet potato twice. Believe it or not they cook. They will still have some snap to them, but they are not raw and the outside are a bit crispy. You simply top the potatoes with your desired topping and your have a nutritious meal option and its fun for the whole family to pitch in and make.
