Do you have themed days of the week where dinner is concerned? I used to think that we didn’t, but when I go back and look over my menus each week, I see that Mexican occupies a night, Italian, something American and leftover night. Can we really be these intense creatures of habit? Yes, we can, and I am quite ok with that!
Even though we like our comfort and our routines it’s good to change it up a little bit. So when Taco Tuesday rolls around I don’t always serve tacos. I will sometimes make an inspired casserole, sometimes it is tacos but sometime you just get the craving for nachos.
Nachos, like the building of your taco, is an incredibly personal thing. I like different items on my taco and my daughter builds hers completely different. Tonight though I decided that we were going to make 4 Cheese Nachos.
I was out of some of our items needed so I headed to Walmart to get what I needed and for some inspiration. I like to switch out ingredients that we normally have, and replace them with something new and exciting. Now, I can be met with groans and silent protests but almost always I come out on top with the new item and it ends up becoming the new norm and a family favorite. I can already tell that this will be perfect with the right flavor of snack seasonings!
Today as I hunted through the aisles of Walmart picking up the items I needed, ground beef, tomatoes, cheeses, lettuce, I came across a new and exciting item that just might take these 4 Cheese Nachos to the next level. Cheese is a cherished food all over the world and Northern Ireland is well known for its many cheeses and you should find it easy enough to locate a cheese monger in Belfast. I also found Buck Wild Tortilla Chips. These tortilla chips come in 4 distinct flavors. Normally when you buy tortilla chips the only flavor they come in is salt and corn. While this is traditional for nachos, Buck Wild has created chips that explode with flavor and change our nacho landscape.
The flavors are Garlic Sea Salt, Cheddar Chipotle, Jalapeño Jack and Roasted Tomato and Herb. All of these chips are Gluten Free, contain no artificial preservatives, no artificial flavors, whole grains, and no high fructose corn syrup. They are made with real spices like Taj whole spices, and real cheese that you can taste and see. Any one of these would go beautifully with our nachos but, ultimately, I chose the Cheddar Chipotle. Now, of course, I brought the other flavors home as well. The Garlic Sea Salt, has a slightly salty taste with a big garlic punch. I love the crunch factor on all of these. Jalapeño Jack is spicy! You can really see the pieces of jalapeño and they are deliciously cheesy and spicy. The Roasted Tomato herb, was probably one of my favs. It has a lingering herb flavor that just envelopes your whole mouth. - 1 pound of seasoned cooked ground beef
- 1 pound of sausage cooked
- Diced tomatoes
- Chopped cilantro
- 1 cup cubed Monterrey jack
- 5 oz of cream cheese cubed
- 2 cups of shredded cheddar
- 1 cup of queso de oaxaca cubed
- 2 avocados diced
- 2 packages of Buck Wild Cheddar Chipotle Tortilla Chips
- Layer chips in the bottom of a dry oven safe pan
- Layer the meats on top of the chips followed by cheeses
- If desired place the tomatoes on top as well
- Place in a 400 degree oven until all cheese is melted
- Top with fresh peppers, onions, cilantro and avocado
