Living so far away from my Mom is hard. It’s especially difficult during holiday times and special days like Mother’s Day. I can remember being a child and making little gifts for her in school, scouts, etc. and not being able to wait to give them to her. My own daughter is this way. She has made a gift everyday and cannot wait to give it! I have had to tell her to put them all in one place until Sunday. For a child waiting a few days feels like an eternity. Everyday she asks if it’s Mother’s Day yet and I have to say not yet everyday. What an awesome privilege to be parent to such a giving little girl.
It’s hard emotionally on my Mom being far away. I think she feels very alone sometimes and misses us dearly. I think about Hannah leaving home and being away from me and I can hardly breathe at the thought. So this Mothers Day I wanted to make her feel extra special and make something that is a favorite of hers, donuts.
My Mom has always been a giving woman, being a single mother in a small town, there was no one else she could depend on, it was just us. She gave of her time, her body, her money, all her effort to make sure we had the things we needed. I wanted to surprise her with some donuts and flowers. So I set up to have flowers delivered and I wanted to make these donuts extra special.

When I arrived in town I needed to pick up one of my prescriptions so I headed to the local cvs and ordered my medicine and decided to look around. I knew I was going to get some Gold Emblem abound nuts while there, because well they are awesome, and delicious and I love all the variety they have, from Sriracha ranch cashews, to plain, unsalted cashews, peanuts, pistachios. I was very impressed with the nut selection. I then noticed something I had not seen before and that was Gold Emblem Abound almond butter. Just think peanut butter but with the taste of almonds.

Hmm so I began to churn the wheels and decided to make an Almond Butter Chocolate donut with an almond butter glaze. Seriously go to CVS and look at the abundant Gold Emblem Abound products that are available. These products are good quality and will compliment any gathering or party as there is something for everyone you can choose from.

I knew I wanted to honor my Mom and make from scratch a chocolate donut with almond butter as those are her two favorite things. I took out info my cake recipes and tweaked it a little accounting for the almond butter. I mixed all the dry ingredients together and began adding the wet. Once everything was thoroughly incorporated I spooned the mixture into a sprayed donut baking sheet. I baked them at 350 for 12-15 min. Sweet aroma of chocolate and nut butter filled the air. I knew these were going to be good!!! (Also I tasted some of the batter and boy I knew my Mom would enjoy these! 😉 ) When the donuts were cool I made a simple glaze of powdered sugar and almond butter and topped with Gold Emblem Abound pistachios and almonds that I roughed chopped.

- 1 cup flour
- ½ cup cocoa
- 1 tsp of baking powder
- ¼ tsp salt
- ¼ cup brown sugar
- ½ cup sugar
- 2 tbsp melted butter
- ¼ cup of almond butter
- 1 egg
- 1 tsp vanilla
- ½ cup of milk
- ¼ cup of almond butter
- ¼ cup of milk
- 1 cup of powdered sugar
- Preheat oven to 350 degrees
- Mix dry ingredients together including flour, sugars, baking powder, cocoa and salt.
- Next add your wet ingredients. You can mix the wet ingredients in a separate bowl if desired.
- Combine ingredients and add into donut pan. The recipe makes 12-14 donuts.
- Bake at 350F for 12-15 or until a toothpick comes out cleanly.
- Combine all ingredients and glaze donuts once they have cooled completely.
