Oh my gosh do I love bacon. I think I could really live life and be a bacontarian. Lol! But I am always trying to figure out ways that I can re purpose bacon. How I can incorporate my favorite ingredient in something new or serve in a way my family hasn’t had it before?
Now I wasn’t always the bacon lover I currently am. My wife has had much to do with that. When we first met and started dating I was a boneless, skinless chicken breast only type of person. Needless to say my wife was not. She slowly began to change my mind and opinion on different meat choices. One of her favorite foods was…you guessed it bacon.
I always thought of bacon strictly as a breakfast food. It never really occurred to me that you could actually eat it for other meals. But boy can you eat it at other meals! And you know what??? It’s just as delicious there too!!
While shopping at Walmart recently I decided I would pick up some Wright Brand bacon and bring it home for dinner. I like Wright Brand bacon because of its thick cut texture and how well it holds up on the grill and in the oven. I have been craving BLT’s lately and I grabbed some lettuce and headed home. I had just harvested some tomatoes from my garden earlier in the day so I knew they would go beautifully with my spin on a BLT.
What’s the spin?? Well it’s an authentic BLT. BLT stands for bacon, lettuce and tomato. It’s usually places on top of sandwich bread and condiments may or may not be added. But what if you strip away the bread and fashion the bacon into squares and just have bacon, lettuce and tomatoes? I wanted to give it a try.
I cut two strips of bacon in half and then wove them together in square shape. I just overlapped the pieces alternating each piece and tucked excesses underneath. I repeated this process four times. I place the squares into a 400 degree oven and cooked them for about 30-35 minutes. Once the underside was crispy I flipped them over and allowed the other side to crisp up as well.
The result? Pure BLT heaven!! Paired with garden fresh tomatoes and leafy green lettuce you could not ask for a tastier dinner!!!
Ingredients:
8 pieces of bacon halved
1 tomato slices
1 head of lettuce
Directions:
Pre heat oven to 400 degrees. Weave 4 halves of the bacon together in a square shape. Repeat with all bacon. Place on a cookies sheet and cook for 30-35 minutes turning once when underside is crispy. Enjoy!
