Life is very hectic for us right now. We are selling our home. We have decided that its time for us to move and be closer to my family. So that required us to literally clean out the house of the accumulated last eight years of our life. Even though our house boast no great size it does hold quite a few memories. I proposed to my wife in this house. We talked and made future plans which included children and then brought Hannah home to this house. My wife learned that I can be handy and build things, like our deck. We have already shared a lifetime of memories in this house, but as our family grows the walls have begun to feel more constricting and we want to move into a home that just fits us better.
If you have ever sold a home then you will know that it is constant work to keep it clean. Just today Hannah asked me why do we have to clean top to bottom everyday? I tried to explain to her that we have to keep the house exceptional because we never know when we are going to have a showing. I find myself is deep anticipation when the appointment center call and says that there is an agent requesting to show our home. Will this be the one? Will they make an offer? Please, make an offer! LOL! Its stressful but wonderful all at same time. As you can imagine showings can happen at inopportune times like around dinner. The last thing that you want to do when the call comes is say, NO. So you say yes and frantically clean, and then you have the dreaded thought of dinner what are we gonna eat? What can I make and not have it be 10p.m. when we finally consume it?
Recently, I discovered Wright® Brand Bacon and its deliciousness on the grill. I can remember growing up putting bacon on the grill and how much we all enjoyed it. So one evening when I got the call for the late evening showing I decided that I would use what I had at home and throw something together quickly using Wright® Brand Bacon. Bacon is not just for breakfast and the sandwich I managed to pull together in minutes proved just that. We love bacon in our house, it’s a go to for any meal of the day, and we also love avocados. I could avocados for just about every meal and some days I do. My wife and I have a huge tomato garden and I thought why not pull all those things together with the grill. I placed three strips of bacon per sandwich on the grill over medium-low flame and allow them to cook until desired crispiness on the grill. This takes about 10-15 minutes. In the meantime I mashed up a whole avocado and spread it over 1 piece of bread followed by thinly sliced fresh tomato slices. I then topped all of that with Colby and cheddar cheeses. I buttered both outside pieces of bread and retrieved the bacon from the grill and placed it on the sandwiches. I placed the sandwiches on the grill diagonally and briefly closed the lid for 1-2 minutes, just enough time to get crusty grill marks on one side and melt the cheese. I turned them and allowed the same to happen on the opposite side. The result is a delicious crust on a Bacon and Avocado Grilled Cheese!
