Life is hectic. I think the older Hannah gets and the more she gets involved in after school activities the busier we become as a family. We spend our time running around to Kindermusik, preschool, dance, etc. Some times it is tempting to just jump through a drive through and have dinner on the go. But, I am very frugal by nature, and I always know that eating at home is cheaper than going through a drive-thru.
I need to get my family around the table. It seems to be the place where we connect, even for a short amount of time and really talk about our lives. I know that this is highly important to my wife, and we have to foster this habit now if we want our family to do it in the future. So when dinner needs to be quick it has to be acceptable by adults and preschoolers alike. I can’t get back out the door to get Hannah where she needs to be if I am fighting her to eat her dinner. Man, dinner table fights with a toddler or a preschooler can be taxing. This is not something that I have time for when we are busy.
We have tried lots of different tactics to tackle week night meals when we are busy, crockpots, left overs, sandwiches, but all of those things can quickly become boring. I wanted something I could make with 15-20 minutes right after I get home from work and be back out the door fairly quickly to head to our next activity. That is when I was introduced to Campbell’s® new line of sauces. Campbell’s® has skillet sauces for stove top cooking, oven sauces, and slow cooker sauces for those days you need to use your crock. One of these would help to spice up our busy dinner routine.
Now my wife would probably cringe at this, and actually she laughed when she saw what I had done. I was in a hurry and my wife wasn’t home yet so I went to the pantry to grab some noodles. Well wouldn’t you know it, when you are hurry, you don’t have the one thing you need. I didn’t have any short pasta. Take notice of the emphasis on the word short. I had lasagna noodles. That’s right folks this Dad right here cooked lasagna noodles and then diced them up into noodle sized squares. Now that is thinking on your feet!
I decided on this particular night to try the Campbell’s® Bacon Cheddar Beef Skillet Sauce. We love cheese and who doesn’t love bacon really??? I had some noodles that I boiled and I browned the meat. I then poured over the sauce and allowed the meat and sauce to heat through. I added the al dente noodles and just like that it 15-20 minutes dinner was done. Add in a bag of steamable veggies and you have a great busy weeknight meal that you and your whole family will enjoy. I honestly could not believe that in 15 minutes I was able to pull off a dinner that was easy and so tasty. It had an awesome cheesy flavor and paired with perfectly al dente noodles ended up being a crowd pleaser at my table. The subtle hints of bacon throughout really made this dish stand out.

Ingredients:
Campbell’s® Bacon Cheddar Beef Skillet Sauce
1 lbs of ground beef browned
8-10 oz of pasta cooked
Directions:
Brown ground beef and drain, add in sauce. Cook pasta according to package directions and add to ground beef and sauce. Pair with your favorite veggies for a complete meal.
