I’ve always loved berries. When I was young we had a mulberry tree and one of my earliest memories was getting my hands all stained picking them and eating them straight off the tree! We lived in rural Kansas, there wasn’t much else to do for a young boy my age. To this day, I still love my strawberries, blueberries, raspberries and of course blackberries!
Now I’m not normally a breakfast eater. But recently, I started doing CrossFit. Yes I know I feel like some days I’m killing myself! But I’m really trying to eat healthier, but one of my biggest struggles is food boredom! I get so tired of eating the same thing and so I’ve been making a constant effort to try something new every week!
A quick trip to the Walmart Produce section always gives me inspiration! They have some fantastic produce especially berries. You can either stop by the center produce section and pick up some berries there, or head to the refrigerated case. Either way you are going to find an excellent selection!
So how am I going to mix up breakfast….I’m thinking a fruity oatmeal? I haven’t always been an oatmeal fan. My wife has been on the health bandwagon for a while, and she knows how to make her oatmeal in a way that she loves, but I haven’t quite found a version I fallen in love with just yet. She decided to make up some Berry Oatmeal and add coconut milk, a few different types of seeds and coconut nectar than bake it. I’m intrigued. Baked Berry Oatmeal. That should be a nice addition to my boring morning routine. Now if you don’t have access to coconut milk you can always use just milk and the coconut nectar you can just substitute sugar if you don’t have it on hand.
My wife started working on the recipe and I began smelling this deliciously nutty aroma coming from the oven and I couldn’t wait to at least try it. If it tasted half as good as it smelled I’m sold! It came out of the oven and looked almost like a pie! It has a very nutty flavor with a hint of sweetness and the berries really give it a full rich flavor. If you love oatmeal and berries, you’ll love this. It will definitely break up the monotony of my morning meals!
- 1 cup of old fashioned rolled oats
- 2 cups of vanilla stevia sweetened coconut milk
- 1 tbs of coconut nectar
- ¼ of sunflower seeds
- ¼ of flax seeds
- ½ cup of blueberries
- 1 cup of strawberries
- ½ cup of black berries
- 1 tbs of coconut oil
- (Optional 2 scoops of protein powder)
- Preheat oven to 425. Melt coconut oil slight in microwave.
- Add oil in bottom of mixing bowl, followed by all the dry ingredients.
- Thoroughly mix dry ingredients and add in liquid.
- In a sprayed pan place oatmeal mixture into pan and put berries on top of oatmeal.
- Bake for 25-30 minutes or until oatmeal is cooked through to desired doneness.
