This week I made these delicious cherry peach cupcakes with homemade peach icing as part of a sponsored post for Socialstars #WalmartProduce
Growing up I was exposed to many different foods, all kind of fruits and vegetables. Some of my favorite fruits that I could eat by the bucket loads are peaches. I love all the varieties of peaches that are available these days in the stores. But one thing I never ever had growing up were cherries. I literally thought that cherries only came in the that little red jar and covered in red syrupy liquid. I was not a fan.
However, my mother-in-law changed all of that for me. I happened to be visiting her one day and there she was eating a fresh cherry. I sort of looked at her quizzically and said what are you eating? She said, “oh I am eating a cherry.” I have to admit I was taken a back, and I said to her, “like a real cherry?” She chuckled and said, “Yes! Have you ever had one?” I was almost ashamed to admit that I had not. So my sweet Mother-in-law began to educate me on how to eat fresh cherries, and I have been a fan ever since!
So each year, I wait for those summer peaches to come in the store, and that is quickly followed my cherry season!!! I get almost gitty when I see them in the store. Hannah has inherited her Grandmother’s love of cherries, and my newfound one, but I also am trying to introduce her to my other beloved stone fruit, peaches. So Hannah and I were in Walmart recently and we were shopping for our fresh produce, when I saw them, my beautiful red cherries!! Not far from those were lots of beautifully ripe peaches, I knew I was buying those and taking them home!
I have to say that I have been really impressed with the variety and quality of Walmart produce. They always have a wide selection of produce available, and it’s very fresh. I like to buy a plethora of veggies and fruits; Walmart produce always rises to the quality I expect AND they guarantee it!
Bringing home my newly procured stone fruits I knew I wanted Hannah to try them in their natural state, but I wanted to do something fun and festive as well. So I put my thinking cap on and decided to make a peach/cherry cupcake with a cherry buttercream. Topped with a cherry and some dried peaches that I made myself in my oven. This easy simple recipe, with the infusion of all the benefits of fresh fruit was simply amazing!
Remember to stop into Walmart and get all of your produce needs! You’ll be thrilled with the quality and they have an excellent guarantee.
- 1½ cups all-purpose flour
- 1 cup sugar
- ¼ tsp salt
- 1¼ tsp baking powder
- 1 stick unsalted butter
- 2 eggs
- 3 peaches
- 10 cherries
- 2 sticks butter
- 3-4 cups powdered sugar
- Preheat oven to 350 F.
- Add butter and sugar to a bowl and cream together. This should take 3-5 minutes
- Next add eggs and combine
- Next whisk flour, baking powder and salt into mixture.
- Next add one peach and 10 cherries to a food processor or juicer (Ninja is what I used). This should yield about 1 cup of juice. It's okay to add everything, just remember to remove the seeds before processing.
- Add to cupcake tin and bake at 350 F for 12-15 minutes.
- This is a classic buttercream recipe. Add two sticks of softened butter and belt for 2-4 minutes, until smooth.
- Cut up a half a peach and juice or process it. It should yeild about ⅓-1/2 cup of juice. Of that, just add ¼ cup of the juice to the icing.
- Once, the peach is incorporated with the butter, add one cup of powdered sugar at a time. You will need to continue to do this until the icing is stiff. After 4 cups, if the icing still isn't stiff, place in the refrigerator for 30 minutes and let it set up.
- For the garnish, thinly slice a peach on a greased cookie sheet and bake on 200 F for 2-3 hours.
Walmart is great when it comes to produce these days, it’s as if they continue to get better and better. Anyways, my mouth is watering just looking at these delectable cupcakes. I wish I had the skills to make them look that good, but hey, I’ll do my best. 🙂
Wow these cupcakes made from walmart produce is really tasty looking. My goodness I want to make these now. They just look so good an i can only imagine the amount of flavor there is with these cupcakes.
I need to try to make some for myself.
Let me just say that I am really excited to give your recipe for these cupcakes a try. I usually go the traditional route of making chocolate or vanilla flavored, so this is a change I’d love to make to my future cupcakes. Plus peach flavored sounds different to me and I would love to give it a try.
You made this all with walmart produce? I am in love with it! Thank you so much for the recipe and making me want cupcakes today. Have a good day!
This is how you make good quality cup-cakes. The peach frosting sounds very good and it just looks really good. Anyways, I usually get most of my food from wal-mart anyways as their food is pretty top tier in my opinion. I’ve made some great cake, pies, and other foods from ingredients bought from Wal-mart.
Produce and general food from Walmart is pretty top quality these days and they only get better I believe. Anyways I am for sure going to try to make these myself. They look awesome and I haven’t had peach flavored anything in years sadly. So it’s time to get back on that.
I’m not so sure what kind of a mix is a cherry and a peach ( sour-sweet kind off??) but cupcakes are one of my favorite ( even the one that i can buy in the store, not high quality..) and I would love to try your recipe.
