Well it seems to be round two of the Polar vortex around here. I have been running around with Hannah all day on my day off running errands and by the time we get home I am exhausted. But we have to get dinner done and I need it to be a wholesome dinner that is done a relatively quick amount of time. So I decided I would grab one of the Campbell’s® Soup Oven Sauces we have in the pantry and throw something together in the oven.
Growing up one of my favorite dinners was chicken potpie. I love everything about it, the sauce the crust, and I want to get a bite of everything in one. As much as I love chicken potpie I don’t always have the time, or my wife to put the work into a chicken potpie. So I decided to go with the chicken potpie sauce from Campbell’s®. I didn’t quite know what to expect, would it live up to my potpie expectations? I was about to dive in and find out!
I read the instructions, and they simply said, put veggies in a roasting pan with chicken and stir in the sauce. Place in a 400-degree oven and you have dinner in 40 minutes. I didn’t think it would be honestly that simple. We were kind of late getting home from our errand day and I didn’t think there was any way we could have a wholesome dinner that quickly. I had some baby carrots, some frozen broccoli, and a bag of mixed veggies I threw it all together in the bottom of roasting pan with about 4 diced potatoes, topped with some frozen chicken breast tenders and finished it off with the sauce. I stirred to combine everything, added a little garlic, cause that’s just me, I think everything needs a little extra garlic and put in the oven. I cooked mine for 45 minutes because my chicken was frozen and voila I had dinner in 45 minutes.
We barely noticed the passing of time, we sat down and played some Mario U on our Wii and literally dinner was done in no time. But the real test was taste. Would it really measure up to what my idea of chicken potpie was? I knew at the at least my nose and mouth were responding because I was salivating and that had to be a good thing. I was not disappointed. The veggies were nice and roasted, coated in a creamy sauce. The chicken on was tender and juicy, and there was not a bite that was disappointing. I would make this again and again. I am so glad to find something that I have found something that I can make in a pinch and get a wholesome dinner on the table quickly. - 1 ½ lbs of boneless skinless chicken breast
- 4-5 small potatoes
- 2 cups of frozen broccoli
- 1 bag of mixed frozen veggies
- 1 package of Campbell’s Soup Oven Sauces Chicken Pot Pie
- Place all ingredients into a roasting pan.
- Add sauce, stir to combine and place into a 400-degree preheated oven.
- Roast for 45 minutes and serve.
