Let’s talk about the “D” word, yes that one, DIET. Sigh, it’s a necessary evil for most of us. Bless you, who can handle all the Taco Tuesdays and not suffer any consequences. Unfortunately, this is not the majority of us. The low-carb diet movement has gained momentum. You cut out the carbs, which are rice, pasta, bread, etc. and combine that eating with exercise in order to help shed pounds. Sounds good right? It’s oh so much harder than you realize. The trick is finding products that can help you through. Read this century bob review if you would like to take up boxing. Good substitutions that will allow you to have your favorite foods but still cut the carbs. Once you do cut out the pesky carbs you will find yourself feeling better and the fog beginning to clear.

In our house, mexican food is a staple—fajitas, tacos, we have them at least once a week. Our absolute favorite meal to have are enchiladas. If you have ever had enchiladas at an Authentic Mexican Food Restaurant you know that this is one meal that is delicious, but also can be carb heavy. That being said, I would never turn down plans to go to a mexican restaurant. So with our love for this plate in mind, I set out to revamp this meal for our family on our low-carb journey. The hardest job I have is making our favorite meals into low-carb delicacies. It can be tough taking most of the carbs out of something and then trying to make it taste just as amazing.

But finding those great products can really go a long way to easing your transition into the low-carb lifestyle. For my family a staple in our house that we couldn’t survive without are Mission® Carb Balance Soft Flour Tortillas.

These wonderful tortillas have become a staple in our home. With only 6 net carbs per tortilla they are perfect for the low-carb lifestyle. They make wonderful egg and cheese burritos, taco shells, and of course our beloved enchiladas. Many times when you buy products that claim to be low-carb, they will say they taste great! You will never miss the carbs. Except that you get them home and they taste horrible!!! This is not the case with Mission Carb Balance Soft Flour Tortillas. They taste amazing just like you would expect a flour tortilla to taste, only without as many carbs.

This family enchilada recipe is one we have been making for years. It’s super simple and I often make it for lunch. It takes about 30 minutes to put together and bake. I use left over chicken that I have already cooked, a rotisserie chicken would work really well here too. I shred the chicken, mix in a few ingredients, roll the mixture into tortillas, top with cheese and green enchilada sauce. We just happen to prefer green sauce but you could do red if you like. With Mission Carb Balance Soft Flour Tortillas you don’t feel like you’re missing out, well, because you aren’t. They are a wonderful substitute and replacement for regular flour tortillas.

It’s not always easy being on the low-carb side of things but with the right tools you can remain there and those tools can go a long way to helping you achieve your goals.
