Finally summer is in full swing. It’s the time of no school, pool parties, days spent playing outside, and water balloon fight reign supreme. Gone are the cold days of winter, and the layers of clothes. We welcome the sun with all the vitamin d we can make. The summer brings new life continued and a sense of freedom, at least it does if you’re a child. LOL Most adults still have to work. One of my favorite things about summer is to garden.

I generally have a huge garden. This summer however, we are still unpacking our house, and renovating, I just don’t have time for more than a couple of tomato plants and herbs. The vegetables in the summer are sweeter, juicer, and all around just taste better. My favorite veggie to eat right off the vine, is cucumbers. Seriously, you have never tasted anything better than your own home grown cucumber. I love to walk out to my garden and see the seedlings pop-up, then to watch in amazement as the blooms change into fruit. The fruit of those blooms become veggies that are delicious for all of us.

Now whether or not you are an avid gardener with a green thumb, or you proclaim to be the ultimate plant killer, you can still enjoy fresh veggies in the summer from your local grocer, or farmer’s market. I love when I see the juicy, red tomatoes in the store, I know they are going to smell the best they will all year, and that smell just seems to embody summer time. Prices drop on in season veggies, we get to enjoy some of our favorites all summer long. As the evenings get lighter, and the days get warmer, garden festoon lights are the perfect way to enjoy your outdoor space.

When its hot outside I don’t want to eat a big heavy meal, I want something light, crisp and refreshing that highlights the best parts of summer but doesn’t weigh me down. This translates to putting those delicious seasonal veggies together in a salad. Choosing a salad in the heat of the summer is going to not only be tasty but also keeps me fueled to do those awesome outdoor activities. But what do you top that salad with? Nothing will ruin a salad quicker than a bad dressing.

I like real and fresh dressings to top my salads. My favorite flavor of dressing is ranch. For me ranch dressing highlight all those wonderful, tasty summer flavors and complements them making the whole salad come together. My go-to ranch is Litehouse refrigerated dressing. Cilantro Lime Avocado Salad
1 chopped heart of romaine lettuce
1 cup of red grape tomatoes
1 cup of yellow grape tomatoes
1 diced red onion
1 bunch of cilantro chopped
1 avocado diced
3 limes juiced
Litehouse refrigerated homestyle ranch dressing
Directions:
Mix all veggies together in a large bowl. Add lime juice and toss. Pour or spoon ranch dressing over salad in desired amount.
