So let me first say that shock, I’m not a huge coffee fan! I rarely drink coffee BUT my mother-in-law happens to be visiting us for the holidays and she is a coffee lover. On top of that Seattle’s Best sent us a great sample pack of coffee and so naturally I decided to make something a little different. This is a semi-homemade coffee cupcake. It isn’t one of those fancy recipes that has all the ingredients listed, it’s literally a box of chocolate cake mix and some cold coffee. I told you, nothin’ to fancy. I thought I would surprise my mother-in-law and see how she liked them! Suffice to say, she didn’t just have one.
The frosting is my classic homemade frosting. I love for frosting to take on flavors that are already in the cupcake itself. This helps to bring out the flavor you are going for. So in this case, the frosting was powdered sugar, cream cheese and a little coffee. Nothing to complicated. I figured I take a shot at piping the frosting to impress my dear mother-in-law, but don’t worry I multi-tasked. I watched Scandal on ABC while frosting the cupcakes!! Yes, I will say that I had to refrigerated the frosting on the commercials, because it got a little warm (your hands will heat up the frosting, and cause it to get a little soupy).
Janet came home and I was waiting for her!! I didn’t tell her what type of cake it was and she guessed right away. I love seeing people’s faces when they realize it’s not a traditional chocolate cupcake, but surprise, COFFEE!! She said is had a great flavor, and truth be told, she loved the frosting. She found the bowl and cleaned it up!!! Then again, what’s not to love about cream cheese, powdered sugar and coffee!
All in all this semi-homemade coffee cupcake recipe is truly a keeper. It’s simple, something that any parent with a toddler can appreciate. It’s also under $1o to make, which is a great thing in my opinion! I would strongly encourage you to try it out. You don’t have to get all fancy with the frosting, although it’s fun to impress! Frosting, in my book is frosting! Just make sure it’s on MY cupcake!
Cake Mix: $1.50
Coffee: $1-2 (just counting what I used, most people will have this at their homes already)
Block of Cream Cheese: $1.50 (you don’t need to use the entire thing)
Powdered Sugar: $2.50 (you don’t need to use the entire bag)
- 1 Box of Chocolate Cake Mix
- 1¼ cup of strong coffee cooled
- 2 tsp of coffee grounds
- 4 oz of room temperature cream cheese
- 6-8 cups of powdered sugar
- ¼ cup of coffee
- Open the cake mix and place it into a mixing bowl
- Add 1¼ cups of coffee. If the batter is a little stiff, just add a little more coffee (different brands of cake mix vary)
- Mix thoroughly then bake for 15 minutes or until a knife comes out clean
- Classic icing recipe is 4 oz of cream cheese and powdered sugar, mix them together
- Now add a little bit of coffee. If you feel the icing is a little runny, just add more powdered sugar until it firms up!
