Buttercream frosting is always amazing right? I’ve always loved soda, my wife would probably say it’s one of my biggest vices. So while baking cupcakes one afternoon, I thought, why not try Coke Buttercream?! Thus this recipe was born!
Simply adding coke to buttercream frosting wouldn’t work. The flavor wouldn’t be strong enough and if you used to much liquid, you would end up with soupy frosting. So I reduced the Coke by at least half. I was looking for a syrup consistency.
After letting it cool, I added it to my classic buttercream recipe and WOOOOOW. The flavor was there, and it really took the cupcake to another level. Give this recipe a try. You could use Pepsi, Dr. Pepper, anything you wanted. Just remember to reduce the soda to a syrup and let it cool before adding to the buttercream. If you don’t, the frosting will break.
- 2 cups of Coca-Cola
- 3 ½ cups of powdered sugar
- 2 sticks of butter
- 2 tbsp of milk
- Add two cups of coke to a large pot and boil it down for 20-30 minutes stirring infrequently.
- After 20-30 minutes the coke should be reduced to a runny syrup consistency, chill in the refrigerator for about 15-30 minutes until cool to the touch.
- With an electric mixer, beat butter on medium for 1 minute.
- Add the coke and mix thoroughly.
- Add the powdered sugar and milk.

Given that butter is slippery, we can assume a low friction coefficient, therefore a keen ability for higher speeds. I am going with Mach 2. 😉

Can you please advise how much cola is remaining after its reduced? 1/4 cup?
My soda never reduced used Dr Pepper and followed the instructions to a T
It takes longer than 30 minuets to reduce the soda. We had ours going for at least an hour. We used Dr Pepper.
Same here, I left mine on for well over an hour. There was only about a quarter cup left, but it was still the consistency of coke – just hot and no longer carbonated
You could use the syrup for the soda stream machines or there is an excellent dr pepper syrup in the ice cream aisle.
I used 1/2 cup of orange soda stream syrup with 1 stick of butter, 4 c of powdered sugar and 2 tbs of milk. It was so good!
I added a tablespoon of corn syrup to my soda while reducing it, seemed to thicken it up nicely. Took about 40 minutes, stirring with a whisk every minute or so. Great recipe!!

I followed step by step, with multiple tries, and it separated into a weird clumpy and gross mess every time. Wouldn’t recommend, unless someone has ideas of how it could have possibly gone right.
