Do you ever get into a dinner rut? I think we all do. We get comfortable, and as humans we are creatures of habit. Monday becomes Spaghetti Night, Tuesday-Meatloaf, Wednesday-Pizza, Thursday-Leftover night, Friday-Family night out. I mean I am sure it can vary from time-to-time but you get the picture. Sometimes I just need a break from all the monotony, and I need a change up from Taco Tuesday.
Now don’t get me wrong, I mean no disrespect to Taco Tuesday, and in this house we love our Mexican Food. But sometimes I just need a change! Well, not only is the problem the rut that we get into, there is also another problem that pops up – what do we make in place of Taco Tuesday? Everyone loves Taco Tuesday, and if I take that away I might have a slight revolt on my hands. What did Mexican food night do to deserve such treatment? Lol. I think it’s important for us to branch out and try new things so this week I decided I would change things up. Taco Tuesday was out!! Let the weeping and bashing of teeth begin!!!
So on my weekly trip to Walmart, I decided that I would allow myself to get inspired. I came across some of my favorite sausages, Hillshire Farm® smoked sausage. I have been eating these delicious sausages since I was a child. I love the signature ring that you buy them in, it immediately reminds me of breakfasts with my Nanny or lazy summer nights.
I love Hillshire Farm smoked sausages because they are so versatile and full of authentic flavor. They’re also family owned, generation to generation, so I know that they’re made with high quality. Creamy Spinach and Sausage Pasta is what I decided to make. I grabbed a few more ingredients that I needed, including some fun pasta shapes, checked out, and headed home. I was certainly excited for dinner. Once I got home, I prepped the smoked sausage by cutting it into round pieces. The great thing about this sausage is that it cooks oh so quickly, I knew I was going to have dinner done soon. I sautéed the sausage and added in some spices, and a can of chili ready tomatoes. Once everything was nice and bubbly, I added in some chicken broth then tossed it with some rotini pasta. I stirred in fresh spinach at the end and topped it all with cheese.
This was so good! It tasted like an awesome sausage chili mac! Best thing about it, the family ate it up, even the spinach! I am pro at getting them to eat their veggies. - 1 package of Hillshire Farm smoked sausage sliced into rings
- 1 tbsp of oil
- 1 cup of frozen diced onions
- ½ cup of frozen green peppers
- ½ tbsp of chili powder
- 1 can of chili ready tomatoes
- 1 cup of chicken broth
- ½ cup of heavy cream (substitute milk or half and half)
- 1 package of fresh spinach
- 10 oz of cooked pasta
- 1 cup of favorite cheese
- Prepare pasta according to the package directions.
- In a skillet over medium high heat add in sliced sausage.
- Then add in onions, green peppers, spices and allow to brown.
- Add the tomatoes, followed by the chicken broth.
- Bring to a bubble then add in heavy cream.
- Turn off heat and stir in pasta and fresh spinach.
- Top with cheese. Enjoy!
