
I love the fall. Although it was 90 degrees today, nothing says autumn than the leaves falling, the temperatures falling and the delicious smell of pumpkin. We LOVE pumpkin in our home, and as they being to show up in stores, this is one of our favorite things to make. Now I’m not a huge oatmeal fan, and I normally would not try and make oatmeal in a crockpot, but my wife and I are both super busy in the mornings! This recipe offers the perfect balance of time and taste, and trust me it’s AMAZING.

This is a simple and delicious pumpkin oatmeal recipe. I initially was a little worried about the oatmeal, but it held up well in the crockpot. This is super simple, which is something I love about this recipe. Literally, just throw all the ingredients into the crockpot and walk away, go to sleep, wake up to the comforting smell of pumpkin. You get HOT FAST breakfast without having to worry about being late for work. Yea, my kinda recipe.

- 1 cup of steel cut oats
- 2 cups of milk
- ¼ cup of agave (or ½ cup of sugar)
- 1 tsp of vanilla
- 1 small can of pumpkin
- 1 tbsp of chia seeds
- 2 tsp of pumpkin pie spice
- 4 tbsp of butter
- Add all ingredients to the crockpot and cook on low overnight.
- Just before going to bed turn it on, and it should be ready in the morning, 6-8 hours later!

What do you mean by “small can of pumpkin? How many ounces, please?
I made this recipe this morning- it smelled so good, but when I looked inside the crock pot, all the edges were burned! The middle was yummy, though! I suppose I should have sprayed the pot with Pam or something before adding the ingredients.
Every crock is different!! I’m glad the middle was still yummy!!!!
I made this last night. Followed the recipe to the letter….tasted like vomit. Literally. Not even my extremely NON-picky husband would eat it. Wondering what happened???

just a suggestion, they make crock pot liners. I used them all last winter when I made crockpot oats. hope this helps.
In regards to the edges burning, I saw a similar recipe where the blogger used a “double boiler” method – put the ingredients in a glass bowl, set that in the crock pot, & surround it with water. I have not done it myself yet.
Using vanilla almond milk instead of milk, will cut back on the sugar in the difference of sugar between milk & the vanilla almond milk. Does that sound right? I’m not very experienced at this.
I looked again at the double boiler method, you surround the glass bowl with water up to half way around the bowl.

Do you stir it and what are chia seeds? Can you omit them? I have bran, flax and wheat germ in my steel cut oats.

Chia seeds are full of omega 3’s and are very popular right now. You can definitely omit them. But if you have flaxseed, just replace the chia seeds with them. Same amount and everything. Good luck!
So if I save the leftovers in the fridge will it still be good if I have to microwave it? I’m the only one in my family who will be eating this and I don’t want it to go to waste.

Amen Lana, just coming to say the same thing about ketones, these are dangerous and definitely not a preferred substance. Some starches are needed and required. Otherwise Diabetics would do fine and dandy with no carb which is of course not the caese if you’ve ever heard of DKA.
Have we come up with what a small can of pumpkin is yet? Is it the 15 ounce can. PLEASE!!
Most other recipes only call for 1 to 2 cups of pumpkin puree.
8 ounces is one cup right? A small can of pumpkin is 15 ounces…so I’m going with that. Gonna try it tonight! 🙂

Hi folks, how would you make this recipe if you don’t have a crock pot?
In the past I have had issues with crockpot oatmeal getting burned. But have since made it with the crockpot on the warm setting. It’s perfect.
Can I please ask why all your pumpkin recipes use canned pumpkin? I live in Australia and we eat fresh pumpkin…….we buy or grow it, pick it, and cook it……I am just curious?
Here are some ideas I had about your question:
I think a lot of American cooks are interested in a semi-homemade approach. It saves time and if you are accustomed to canned vs. fresh, what does it really matter? (As I point of interest, I have canned my own pumpkin for later use.)
I’m not sure how many people really know how to prepare a pumpkin or winter squash for recipes.
Pumpkins are no longer considered a food by our government – they are now decorative/ornamental, so they tax us for it.
Size matters…as in what size slow cooker was used for the original recipe? Since every slow cooker cooks differently (some cook hotter than others) it is helpful to consider that when trying out a new recipe. I can’t wait to try it.
I doubled the recipe and put it in a bigger crockpot. I definitely would put this on for 6 hours only. Delicious!
