I think something that most people agree on is that we just like good food. I like to try new things, and when they turn out to be favorites, I want to replicate that favorite food at home. It’s honestly hard for me to follow, write and create recipes, because I am constantly changing my recipes up. If left to my own devices and you ask me how much of something, I would generally say, hmm not sure, a little of this and that. I grew up cooking that way. Which isn’t bad, its hard to give exact measurements, you taste as you go along and adjust the seasonings. What you end up with is a dished with many depths of flavor. So it has its positives.
When we first started making the videos it was really hard to readjust my way of cooking and thinking. I want to share my recipes with you our beloved audience and I want you, if you should so choose to be able to recreate these awesome recipes in your own home. So I had to start truly measuring. Now, I am sure that I may still get it wrong sometimes, and spices, and salt level is such a subjective thing, what’s too little or too much for me, might be just the opposite for you.
While I love to put a full course meal on the table every night, there are nights even with the greatest of preparation that its just not possible with everyones crazy schedule. This is where I utilize my crockpot and few store-bought ready ingredients. We are no strangers to Asian Cuisine in this house, and over the years I have tried my hand at some of our favorite Asian take out. Well today I decided that I wanted to try my hand at Sweet Thai Chicken and Rice.
There are weeks that my crockpot is my best friend. I love that I can put dinner in it and literally I can get on with our busy day and when we come home tired in the evening dinner is there waiting for us. Something else that really helps and goes a long way to getting dinner on the table are the store-bought ready products. One product I always make sure I have in my pantry is Minute-Ready-to-Serve rice.
These rice cups heat in the microwave in just seconds and I can always count on the rice being the perfect texture and compliment to whatever dinner I am making. Tonight’s Sweet Thai Chili chicken is no exception. Rice is the perfect pairing and I forgot to set my rice cooker up to cook this morning. Instead of panicking, I grab the delicious long grain Minute-Ready-to-Serve rice from my pantry and pop a serving per person in the microwave and in just a few short seconds I have dinner ready to go and the rice to complete the dish.

- 1½ cups of broth
- ⅓ cup of soy
- 1 tablespoon of rice vinegar
- 2 tablespoons of chili paste
- ⅓ cup of sweet Thai chili sauce
- 2 teaspoons of ginger paste or powder
- ⅓ cup of hoisin sauce
- Half cup of brown sugar
- ⅓ cup of ketchup
- 1 tablespoon of garlic powder and minced onion
- 2 pounds of chicken breast
- Place all ingredients except chicken into crockpot and stir together.
- Put chicken in and turn to coat.
- Cook on low for 6-8 hrs.
