Well it’s here. We have finally made it through another year. It may have been a wonderful year, a really bad year and more likely a year of good and bad. New Year’s Eve is a time of reflection and planning ahead to make better choices and hope for a good upcoming year. It’s also the last of the holidays and the last day we allow ourselves to be utterly indulgent and have whatever we like to eat. Once the New Year hits so come the resolutions.
Our New Year traditions really vary. Before we had kids we would go over to friends and stay until the wee hours of the morning. But now we have to find a babysitter or just put her to bed early so we can watch the ball drop just us parents. I can remember growing up watching New Year’s Rockin’ Eve. That was by far my favorite thing to do then and it still is now.
I don’t know what happens when the ball drops in Times Square, but it feels like magic. Poof, it’s a new year. So what does one do to ring in the New Year? My favorite way to ring in the new year is having friends over to watch the ball drop and make some good food to eat along the way. That sounds like a wonderful New Year’s Eve to me!
I don’t generally do a big sit down meal for this holiday. It just has more of an appetizer feel to it. I also have made a huge Thanksgiving and Christmas dinner so the wallet needs a break from spending. Making appetizers and having others bring the same makes it easy to not spend a lot. My other secret is shopping at ALDI.
This year we have completely made the switch to shopping at ALDI. Let me tell you it has been a game changer for our food budget. I am always impressed with the quality of ALDI products, the availability of good, fresh and organic produce, and their commitment to bringing good food to the masses at an affordable price. I know I can shop at ALDI for my holiday dishes and they will always impress! For this New Year’s Eve celebration, I wanted to make something hearty that was easily eaten with your hands. I decided on Coconut Tiger Shrimp. I found Specially Selected Black Tiger Shrimp in the freezer section at my local ALDI. I grabbed some eggs, Baker’s Corner coconut flakes, dried parsley bread crumbs, and some butter to pull this dish together.
The Specially Selected Black Tiger Shrimp are the perfect size for an appetizer. If you plan for 2-3 shrimp per person this dish will serve 5-6 people. These are super simple to make and the oven does the work for you so you don’t have to fuss over frying them in oil in a pan.
The end result is delicious and there won’t be any left. Check out your local ALDI and pick up these ingredients to make this amazing dish for your NYE celebration.
Coconut Tiger Shrimp
Serving size: 5-6 cook time: 12-15 minutes
Ingredients
1 bag of Specially Selected Black Tiger Shrimp; peeled and deveined
1 cup of Baker’s Corner Coconut Flakes
1 cup of Chef’s Cupboard Plain Breadcrumbs
1/2 stick of Countryside Creamery Butter, melted
3 SimplyNature Organic Cage Free Brown eggs, beaten
2 tsp of Stonemill Dried Parsley
Stonemill Salt and pepper to taste
Directions:
Preheat oven to 400. In a small mixing bowl beat the eggs, add the salt and pepper and set aside. In another bowl mix together breadcrumbs, coconut and parsley, set aside. Line a baking sheet with parchment. Peel and devein Shrimp. Dip the shrimp into egg mixture and then into bread crumb mixture. You may repeat this process twice per Shrimp if desired. Place on the lined baking sheet. Brush with melted butter. Cook in the oven for 12-15 minutes or until golden brown.
Optional Dipping Sauce
1/2 cup of Burman’s Mayonnaise
1 tbs of Fusia Sriracha sauce
Directions:
Mix together thoroughly. Dip cooked shrimp as desired.
