This is one of our absolute favorite salsa recipes and it’s SO EASY. Literally roast your ingredients and throw them into a food processor and BAM you’ve got the perfect salsa.
You can add more jalapenos if desired, sometimes we add A LOT more, just depends on our mood. This recipe is definitely a mild salsa recipe and it perfect on burritos, for chips pretty much anything!

- 6 tomatillos
- ½ onion
- 1 jalapeño (add more for additional heat)
- ½ bunch of cilantro
- 3-4 garlic cloves
- 1 tbsp of olive oil
- juice of one lime
- pinch of salt
- pinch of pepper (optional)
- Halve the tomatillos and onion
- Take the top off the jalapeno
- Roast in the oven at 400F for 25-35 minutes
- Add all of the ingredients to a food processor
If you don’t use all this up – how long does it keep in the fridge?
It should last at least a week, depending on how fresh your ingredients are.
I made this and it’s good good!! I had no chips but I had cheezes- very good. But I did a couple of things different. I had a second jalapeño to use up, so I roasted it with the tomatillos and onion,I also roasted one clove of garlic since it was a large clove with a very strong garlic flavour (I bought the garlic at the farmers market – it’s not the Chinese mild garlic) and used 2 of the grocery store (Chinese) garlic raw.
I will definitely made this again.
Can green tomatoes be used in place of tomatillos in the salsa verde?
no, you have to use tomatillos, they are available just about everywhere these days

The recipe dose not address the jalapeños clearly for me. Leave seed in? Or remove all.
Leave seeds in for more spice. Take seeds out for less spice.
Does anything special need to be done to the jars that it’s out in? Or just a kid and refrigerate??

Is there any reason why you wouldn’t roast the garlic along side of the onion? I would think the mellow smokiness of the roasted garlic would be amazing. Or am I wrong? Would the roasting make it too sweet? Just asking for a friend. 😉
