Enchilada soup
  • 1lb of NatureRaised Farms boneless skinless chicken breasts
  • 2 cups of chicken broth
  • 1 onion chopped
  • 2 cans of diced green chiles (mild or hot)
  • 1 can of red enchilada sauce
  • 1tbs of canola oil
  • 2 tbs or more of chili powder (no more than 3 tbs)
  • 1 tbs of garlic powder or 3-4 fresh cloves
  • 2 cans of black beans, drained and rinsed
  • 2 cups of frozen corn or one can drained
  • 2 cans of stewed tomatoes
  • salt to taste
  • tortilla strips for the topping
  1. Place chicken in a heavy pot with spices, onion and oil.
  2. Cook until chicken is almost done.
  3. Add in chicken broth and with a wooden spoon scrape the bottom of the pan
  4. Add in chiles, beans and corn and bring to a boil
  5. After it begins to boil add in tomatoes and enchilada sauce
  6. Allow to simmer until chicken is completely done, and the corn and beans are tender
