Homemade Vanilla Bean Ice Cream Recipe
  • 2 cups half-and-half
  • 1 cup heavy whipping cream
  • ¾ cup of sugar
  • 1 vanilla bean (scraped)
  1. Combine all ingredients into a pan and place over medium heat.
  2. The vanilla bean can be a little tricky, take a knife and cut it along a seam and then use a spoon to get out the beans. Add them to the picture. I also added the bean itself once most of the beans are out just to impart more flavor.
  3. Stirring occasionally, bring the mixture to 170 degrees F. (Use a candy thermometer). If you don't have a temperature measurement gauge, you can eye ball this. Just continue heating until you begin to see bubbles. Immediately remove from heat and do not let the mixture boil.
  4. Remove from heat after mixture reaches 170 for 4 minutes and remove the vanilla bean itself.
  5. Place in a container and let cool in your fridge overnight.
  6. Once ready, place in ice cream maker. Mine was ready in 30-45 minutes. It will be soft, to firm up the ice cream place back into freezer until firm.
