Peanut Butter and Jelly Cookies Recipe

Ingredients
Peanut Butter Cookie Side
  • ½ cup butter-flavored shortening
  • ½ cup sugar
  • ½ cup brown sugar
  • 1½ cups cake flour
  • ½ cup of PB Crave Peanut Butter
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 egg
Jelly Cookie Side
  • ½ cup butter-flavored shortening
  • ½ cup sugar
  • ½ cup brown sugar
  • 1½ cups cake flour
  • ½ cup of Blackberry reduction
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 egg
Instructions
  1. Preheat over to 375 degrees F.
  2. Combine the shortening, sugar, and brown sugar in the mixing bowl until light and fluffy.
  3. Slowly mix the dry ingredients into the shortening and peanut butter combine well.
  4. Chill the dough for 30 minutes.
  5. Now the jelly side of the cookies, add about 15-20 blackberries to a small pot. Add ½ cup of sugar and ¾ cup of water.
  6. Place on high and let reduce, stir often.
  7. Once the blackberries have reduced, strain and let cool. You want to remove the seeds so you don't get any surprises in the cookies.
  8. Mix all of the ingredients together the same way as the peanut butter cookie portion, just substitute the reduction for the peanut butter.
  9. If the batter isn't thick enough, add a little extra cake flour.
  10. Chill the batter for 30 minutes
  11. Now remove from the freezer and take small but equal portions of each batter and in your hands roll them into a ball.
  12. Place them on a cookie sheet and bake for about 10 minutes. They might need a little longer depending on how firm or soft you like your cookies!
  13. Let them cool to avoid separation of the two flavors and voila! Peanut butter and jelly cookies!!
