Vegetarian Lasagna Recipe

  • ½ package of whole wheat lasagna noodles
  • 1 package of firm tofu
  • 2 28oz cans of crushed tomatoes
  • 1 tbs of garlic powder
  • 2 tsp of dried oregano
  • 2tsp of dried basil
  • ½ tsp of thyme
  • 2 15oz can of tri-color beans drained and rinsed
  • Salt to taste
  • 1tsp of red pepper flakes
  1. One hour before assembling lasagna place tofu on a large plate between two paper towels, and lay something heavy on top of it to press all the excess liquid out of it.
  2. Cook lasagna noodles according to box directions. In a large sauce pan combine tomatoes, beans and spices and warm through.
  3. Remove weight from tofu and set aside.
  4. When noodles are done drain them.
  5. Put one layer of sauce in the bottom of the lasagna pan followed by a layer of noodles.
  6. Add sauce on top of that and then crumble half of the tofu on top of that layer.
  7. Repeat process ending with sauce on top.
  8. Place in the oven on 350 degrees for 30 minutes or until bubbly.
