Mexican Cornbread Recipe

  • 2 cups of Aunt Jemima Cornbread mix
  • 1 cup of milk
  • 1 bag steam-able bag corn
  • 1 jalapeno
  • 2 cups of cheese (your choice)
  • ¼ cup of oil
  • 2 eggs
  1. Roughly chop the jalapenos and set aside.
  2. Into a large mixing bowl add the cornbread mix, milk, oil and eggs and mix thoroughly.
  3. Next add the cheese and combine
  4. Next add the jalapenos and corn.
  5. Once all ingredients are combined place in a cake pan (round or square) and bake on 400F for about 30 minutes or until golden brown and a toothpick comes out clean
