30 Minute Classic Ramen Noodle Recipe

- 4 garlic cloves
- 3 small baby bok choy
- 3 tbs of white miso
- 1 tbs of reduced sodium soy
- 3 scallions chopped (both white & green parts)
- 1 cup of mushrooms chopped
- 5 cups of low sodium chicken broth
- 1 box of brown rice noodles
- 1¼lb of ground pork
- In a large sauce pan brown together pork, garlic, scallions, chopped bok choy (white and green parts), mushrooms, and soy sauce.
- When pork is about ½ way done add in the miso. (We found the miso at Whole Foods)
- Once pork is fully cooked and veggies are tender add in chicken broth and bring to a boil.
- Add in brown rice noodles and cook an additional 2-3 minutes or until noodles are tender.
