Its summer, well I guess its nearing the middle to end of summer. The days are long and hot and we all want a sweet treat. Hannah asks almost on a daily basis for ice cream. Daddy, please can we get ice cream? I am an adult and I want ice cream everyday but I know that I cannot have it everyday. But after a long hard day of play I must admit there’s nothing like curling up on the couch next to my beautiful wife with a big bowl of the cold stuff.
But I am no longer 19, and I want to teach Hannah good things can come in treat form as well, and the really bad treats should be reserved for just once in a while. So I started thinking about Hannah’s favorite frozen treat, Froyo. What could I make that was kind of like froyo, but monumentally healthier? I sat pondering when my thoughts wondered to my wife. She has been sneaking in and exchanging out plain Greek yogurt in our dishes for quite a while. So I wondered if I could create a treat with Greek yogurt that would give us all our treat fix after dinner, especially with greek yogurt culture.
My wife’s go-to-yogurt has bee Yoplait® Greek peach. She loves it and says it has the best flavor. My favorite snack is a granola, could I combine the two? I thought of my mother, she stirs all kinds of things in to her Yoplait® Greek, so I set out to meld our family’s favorite treat into one harmonious one, Frozen Peach Yogurt bars. So I headed out to Walmart to get some supplies that I will need for this delicious treat. I was very impressed with the varieties that Walmart carried of the Yoplait®, Original, light, Geek and Gogurt! So many flavors, so many choices! I decided that I would get two plain Greek ones and two peach Greek to make my wife happy. I also picked up some nuts, chocolate chips and 1 can of peaches in juice. I headed home excited about making this treat.
When I returned home, it was about 3 hrs before dinner and I knew I had just enough time to get everything mixed and into the freezer. I opened up the can of sliced peaches and drained the juice and then I diced ½ of the can into chunks and placed them in a mixing bowl. I gently tossed the peaches with yogurt then added 2 tbs of Agave to sweeten up everything. In parchment lined 9×9 pan I placed the mixture and spread it out evenly. I then added chopped pecans (any will do), chocolate chips, and finally diced the other ½ can of peaches and sprinkled it all over the yogurt. I placed it in the freezer and allowed it to freeze for 2-3 hrs. The result? Delicious! It was a crowd pleaser and has quickly a family favorite. Ingredients:
2 Plain Yoplait® Greek Containers
1 Can of sliced peaches diced
1/4 cup of chocolate chips
2 tbs of Agave Nectar
1/4 cup of pecans chopped
Directions:
Place yogurt, 1/2 of the peaches, and the agave in a mixing bowl and stir gently to combine. In a parchment lined 9×9 pan spread the mixture out evenly. Top with pecans, chocolate chips, and finish with peaches. Allow to freeze until hard.
