We are in the middle of getting used to this new school routine. I know I keep talking about it, but we are just not morning people. Can’t the day begin at like noon? I mean really? I am only half serious, but kind of serious. It’s a struggle to get up and out of the door and to school by 8:15. We do it, but some days there’s lots of whining over sock choices, my lack of coffee, and how I am ruining her life because those aren’t the shorts with the hearts on them. Sheesh, drama and she’s only 6! But we are in our second full week of school, and we have gotten some things down pat. We pick out school clothes the night before, I pack her lunch the night before and yogurt is always for breakfast.
Now Hannah and yogurt have had a tumultuous relationship. I have always tried to get her to eat yogurt, I eat it myself and I know it’s a good source of protein and calcium, but Hannah has found it difficult to find a brand she loves and will eat consistently. I want her to eat good yogurt and not sugar filled candy for breakfast. I mean seriously, some of the “kid” ones have no protein and lots of sugar. That for me is a no-go. So we have been searching for a while for an option that is tasty as well as give her a morning boost, and hold her over until lunch. We found Wallaby Organic Yogurt and Vans Simply Delicious Cereals.
We are cereal eaters as well for breakfast. But here again, many cereals pack a sugary punch but nothing nutritional. So while shopping at Target I found not only Wallaby Organic Yogurt, but also Van’s Simply Delicious Cereals. The cereal is right in line with how I like to feed my family, non-GMO project verified, no high fructose corn syrup and filled with whole grains. These cereals are also gluten free, kosher, corn free, dairy free, egg free, and no artificial colors or flavors. Now I know what you are thinking, “Can they be good?” I am here to tell you that yes they can! We tried the Honey Crunch and the Cocoa Sensation. Both of these flavors are delicious on their own, with milk or in yogurt. Give these a try and add in some delicious whole grains to your morning.
I decided that I would make a frozen parfait with these products. It’s a great snack or dessert that is made with wholesome products I can feel good about eating or giving to my family. I came up the Frozen Strawberry Cupcake Parfaits. They have a Cocoa Sensation, peanut butter, local honey crust and are topped with the Wallaby Strawberry Yogurt then frozen for a tasty after school snack or after dinner treat.
These are great if you like to keep your cereal crunchy as you eat it – the peanut butter coats the cereal and provides a barrier to the moisture of the yogurt as it freezes. The outcome is a delicious frozen cupcake parfait that has hints of cocoa, peanut butter and decadent strawberry yogurt. It is so good, you would think this was bad. Ingredients:
1 tbs of local honey
12 oz of diced strawberries,
4 containers of Wallaby® Organic Strawberry Yogurt
2 cups of Van’s Simply Delicious® Coco Sensation
1/2 cup of creamy peanut butter
Directions:
Mix peanut butter, honey and cereal in a large bowl and set aside. Line cupcake tin with wrappers and add a layer of the cereal mixture in the bottom. In another bowl mix the yogurt and diced strawberries together. Layer the yogurt mixture on top of the cereal. Allow to freeze until firm about 2-4 hrs.
