I have recently started making my own sauces and dressings. I never realized how amazing simple it was to make my own sauces. When I get in the kitchen and start experimenting with different ways to make sauces, my wonderful hubs does his usual sigh and eye roll…LOL He is wondering if he is going to like the concoction I am coming up with.
Recently I had the opportunity to try green goddess dressing at a friend’s house. This was a typical jarred dressing and it was an awesome flavor profile that I never expected. Something else I never expected was all the fat that was in the dressing. Also I couldn’t read half of the ingredients, I thought hmm I bet I could make a “clean” version of this with wholesome ingredients and most of all less fat. So I set out researching and tweaking my recipe and I was very surprised at the outcome of what I came up with.
This dressing is amazing on just about anything you put on it. I cooked the chicken thoroughly and served it up with some rice and veggies sides. I had to literally defend my portion of the sauce from everyone. You will love this sauce!
- ⅓ cup of light mayo
- ⅓ cup of sour cream
- 1 small container of plain Greek yogurt
- 1 tsp of lemon or lime concentrate
- 2 tsp of Worcestershire sauce
- 1 tsp of Dijon mustard
- ½ cup of packed fresh basil leaves
- ¼ cup of curly parsley
- 4 tbs of chopped fresh chives
- 2 tbs of fresh chopped tarragon
- 2 garlic cloves
- Salt and pepper to taste.
- 4 Perdue Perfect Portions Mesquite Chicken Breasts
- 1 tsp of Dijon mustard
- 2 tsp of Worcestershire sauce
- ½ tsp of lime concentrate
- 2 tbs of curly parsley, chives, tarragon, garlic, and basil chopped fine
- 2 tsp of olive, or avocado oil for sautéing
- salt and pepper to taste
- Place all ingredients into a food processor or blender and puree until smooth. Stir once and then pulse until desired consistency is reached.
- Place oil in pan and all to get hot. Then place chicken and all ingredients into pan and cook until all pink is gone.

Amazing sauce. Will be making the Green Goodness again!
how smooth did your sauce come out? I think I got a really good consistency on mine
I followed the recipe perfectly and my sauce came out DELICIOUS. I will be making this one again, that’s for sure!
