I am constantly trying to come up with options for dinner. Quick options, ones in which I can throw together and everyone is happy. I think over the years it has been stated more than once we love cheese. I mean really in almost any form we love cheese! We eat it alone and on everything. At holidays it is downright heresy if you don’t have mac and cheese and cheesy potatoes. But that’s the holidays. I spend hours cooking and slaving over the food I present to my family. That’s just not something I can, or want to do on a daily basis. But I do want to put a meal I am proud of on my table.
Its seems we have had the gamut of weather this summer. Its started off with a bang and was super hot. Then it rained everyday for a month and half. I mean it got down right cold!! One evening it was down in the forties in June, and I was worried about my burgeoning garden! I love to grill and use my crockpot in the summer. But rain puts a serious damper on my ability to grill. But it spurs on my desire to use my crockpot or slow cooker. However, when the rain left, the heat returned and all was like a normal Summer. But by that time I had tried out and developed some good crockpot recipes that I new would pair well with some tasty grilled burgers! I was excited!
So one rainy day I was rummaging through my freezer to see what I was going to make for dinner that evening and I came across a bag of diced potatoes. While doing my grocery shopping earlier in the week I came across Crystal Farms Extra Sharp Cheddar Cheese. I cannot tell you the love of cheese my family has, it’s a deep personal connection. We also really like the extra sharp stuff. But I was amazed at the selection of the cheeses available. I also really liked that Crystal Farms cheese is a natural product with few preservatives, rich in calcium, gluten free, and lactose tolerant. So even the sensitive tummies in my family could really enjoy any meal I bring together with this cheese. Needless to say I purchased some. I decided that I would make cheesy ham and potatoes in the crockpot and pair that with some grilled burgers!! I knew I would have a weeknight winner here!!
I opened up the bag of diced potatoes and poured the whole back in the slow cooker. Then I added 10 oz of chopped frozen onions, a splash of milk, 1 pkg of diced ham, and stirred everything to combine. I turned the crockpot on low and let it cook for four hours. About three hours in I added in some more cheese on top and let it all melt.
It was amazing!!!! The potatoes were cheesy and oh so tasty!! Everyone loved them and they were a hit. I didn’t spend hours slaving over them, I let the slow cooker do all the work. Ingredients:
One bag of diced potatoes
10 oz of frozen diced onions
8 oz of Crystal Farms Extra Sharp Cheddar cheese
1 package of diced ham
4 oz of shredded Sharp cheddar
4 oz of shredded mozzarella cheese
1/4 cup of milk
Directions:
Place all ingredients except the last two cheeses in the crock pot and cook on low for 4-6 hours or until desired doneness. Half way through add the last two cheeses on top of the potatoes, do not stir in. Enjoy!
