Breakfast is the most important meal of the day, and yet it seems that in my house we always just rush through it. Whether it’s running to work or preschool, breakfast is often forgotten and creativity gets sacrificed for speed.
So last Saturday, when I had a little time, I asked my four year old daughter if she wanted to help me make breakfast. Saturdays are mom’s off day, and do the cooking, cleaning, and 4 year old parenting while she gets out of the house and pampers herself.
I looked at Hannah and said, “how about we make upside down hash brown cupcakes?!” Cupcakes was all she needed to hear. She immediately told me we didn’t have the right ingredients, so we got dressed and ran to the grocery store. My thought on the hash brown ‘cupcakes’ was simple, find quality hash browns, some eggs, cheddar cheese and make something that she could help me make assemble, that’s nutritious and most of all easy for this husband to make.
I went to the refrigerated section and picked up some Simply Potatoes Shredded Hash Browns, by Crystal Farms Company. These are a fantastic product that are fresh, never frozen potatoes. They make everything so simply and are my go-to! As you can see they have a variety of products.
Hannah and I picked up a few other things, including All-Whites, 100% Liquid Egg Whites by Crystal Farms as well as some Aged Wisconsin Cheddar Cheese and knew this was going to be a delicious and EASY breakfast.
I got home and told Hannah to get the mini-cupcake pan. Now she’s thinking the entire time that we are making something SWEET. I turn the cupcake pan over and use some non-stick spray to coat the outside, then mix a little bit of egg whites with the hash browns. I firmly press the hash browns onto the mini-cupcake pan to make ‘bowls.’ I bake them on 450 F for 15-18 minutes and BAM, I’ve got crispy hash browns. While they are baking, I scrabble some egg whites, adding a pinch butter, salt and pepper.
Once the hash brown bowls are out, I add the eggs, top it with a little cheese and lay them on a bed of spinach. I had some extra hollandaise sauce that really worked well with this recipe. It proved to be fun, simple family solution that my four-year old and I really enjoyed.
