The holidays are a really busy time of year for my family. Between shopping, work, and traveling sometimes I feel like I need a vacation come January. I look for thinks that settle me down, things that calm my spirit and bring a smile. This time of year I love to sit next to the fireplace and drink a nice cup of hot chocolate, maybe indulge with a sweet or two, or three.
This year is a little bit different for my family. We are moving, selling our house and have moved in with the in-laws. We love our in-laws but as a young family, we are building traditions and sometimes they aren’t the same. I love the smell of a wood fireplace and our in-laws have propane. It’s just not the same! As we begin the process of building our new home, my wife and I are more resolved than ever to stick to what we love, and we will install a wood burning fireplace in our new home. Thankfully I found an insulation contractor near me for our new house.
Sticking to what we love has been a real theme for us this year. Moving in with the in-laws has taught us so much about priorities. We had to move 80% of our possessions into storage, and honestly, we don’t miss most of it. Because of our smaller refrigerator and freezer, we look for quality products that we know satisfy. My wife also recently had bariatric surgery which allows her to eat smaller portions of food in one sitting. So we adopted a new policy in our house: if we can only indulge a little, make it amazing.
So that brings us to our recipe today. It’s the holiday and while you might think of gingerbread, peppermint and sugar cookies, we are focusing on chocolate, something we absolutely love. We made a delicious, from scratch, salted caramel brownie, infused with HÄAGEN-DAZS® Vanilla Ice Cream. We added more HÄAGEN-DAZS®, which we picked up from Walmart, on top of the brownies and oh my goodness, literally it’s perfection in a bite. The creaminess of the ice cream really highlights the brownie’s cake-like texture.
Sitting next to the warm fire and sharing a few brownies and a bowl of ice cream is just so wonderful. Our Christmas tree is up, the warmth of the fire and the texture of the brownie just warms the heart. This is a decadent dessert and is everything you’d want, especially if you are tired of cookies this time of year.
The HÄAGEN-DAZS® Vanilla Ice Cream is a huge crowd pleaser in my house. We have really started moving away from the ½ gallon ice creams and zeroed in on quality. I want something GOOD and I’ve come to believe that more for less is just blah for less. Picking up a few cartons of HÄAGEN-DAZS® is perfect for our family of three. The ice cream is amazing, the texture is exactly what ice cream should be and the flavor, come on, it’s HÄAGEN-DAZS®, everything is good.

1/2 cup of melted chocolate chips
1/4 cup of cocoa powder
1/4 cup of vanilla ice cream
1/4 tsp baking powder
1/4 tsp salt
2 eggs
3/4 cup of flour
1/2 – 3/4 caramel
