Tis the season for sharing, and giving. I just love that this time of year really brings giving to the forefront of all we do. Many times, especially around the holidays I like to make meals that are family style and very shareable. I also use this time to experiment with different recipes that I have been wanting to try. My family over the years have come to expect exotic cuisine choices. Usually I will take an every day item we love and put a twist on it. This year I decided to change up french fries.
We love fries, its kind of an American rite of passage. To be American is to love fries in some form. I wanted to take those fries and turn them on their American head. I came across LiteHouse Simply Artisan Reserve, Simple Seasons. These are real cheese crumbles that you sprinkle on to foods and it really just elevates the food and takes it to a whole another level. They come in feta and blue cheese. You can add just the right amount of cheese to your dish. The possibilities are really endless but I knew the Feta Simple Seasons would be perfect for my Mediterranean Fries.
I hand cut some potatoes and tossed them with pesto, roasted red peppers, and sun dried tomatoes. All of these ingredients are so flavorful that no additional seasoning is necessary. i spread the cut potatoes onto the cookie sheet and then sprinkled the feta cheese over all the fries. Cook in a 425 degree oven until crispy.
The taste of these fries was amazing. They had the right amount of zing and unctuousness and the Feta Simple Seasons really put it over the top and made this a hit with my family and our visitors. We will be revisiting this meal for sure.

- 6-7 Potatoes sliced into fries
- ⅓ cup of Pesto
- 1 Roasted Red Pepper
- 2-3 Sun Dried Tomatoes chopped
- Simply Artisan Reserve Simple Seasons
- Preheat oven to 425 degrees
- Put sliced potatoes, pesto, diced red pepper, sun dried tomatoes in a bowl and stir to combine
- Place mixture on a cookie sheet in an even layer
- Sprinkle Simply Artisan Reserve Simple Seasons Feta over fries
- Bake at 425 for 30 minutes or until desired doneness
