Of all the villains, the worst one of all is probably Maleficent. She is renowned, sometimes misunderstood, but in Disney’s Descendants she is a schemer. She enlists her daughter Mal, to break the curse and free her from exile. My daughter’s favorite character by far was Mal, she’s smart, newly independent and trying to do right, even if it’s all wrong.
I had a hard time deciding on what to make for our Villain Party. I’ve made Maleficent cupcakes in the past, and they were a HUGE hit, but I didn’t want this recipe for Mal to be evil. I wanted it to be sweet, light and a little fun, just like the character.
If you’ve ever had buttercream, it can be heavy, almost to much. While it’s hard to deny that powdered sugar, cream and butter wouldn’t be a perfect icing, this meringue frosting was surprising light, airy and is one of my new favorite recipes!
I decided to add a little bit of green food coloring to the icing. In Disney’s new movie, Descendants, Mal’s colors are definitely purple, but her eyes are very green. To celebrate her, I added a ‘spray-painted’ “M” to the top. (Gotta watch the movie.)
The cupcake is just a simple vanilla cake that is swirled with purple. This was very popular at our villains party as well. Everyone loved the frosting and there weren’t any left.

2 cups of white sugar
3 cups of softened butter
6 egg whites
1tsp of vanilla
green food color
Over a double boiler or a glass bowl over a pan of simmering water put egg whites and sugar in the bowl and using a whisk cook until the egg whites reach 140 degrees in temp. Then transfer the egg white, sugar mixture to a stand mixer and whip at highest speed for 5-10 minutes or until tripled in volume. Lower speed and begin to add in softened butter a little at a time until completely incorporated. Add in vanilla as well. Continue to mix until icing is thoroughly smooth. Add in desired amount of green color.
