It’s lunch time again, sigh it’s either boring leftovers or salad again. How many times a week do I deal with this? How about you. Now don’t get me wrong I love good leftovers but sometimes I just want something hot and something quick. Is it too much to ask that it also have some decent nutrition? Sometimes in the world and fast and right now some times having a quick nutritious meal is not synonymous.

So in honor of this I am setting out to have lunches and meals in general that are purposefully more nutritious and portion controlled.
I recently discovered Minute Ready to Serve Rice. It’s non-GMO and gluten free. It comes in single serve sizes, brown rice, basmati rice, chicken rice mix, brown and wild rice, Fried Rice mix, multi-grain rice medley, black beans and rice, jasmine rice, white rice, whole grain brown rice, and yellow rice mix. I decided that because I am focusing on nutrition awareness that I would use the Multi-Grain Medley and make a quick chicken fried rice in just seconds.
I bought some grilled chicken strips and I had some leftover veggies and I knew I wanted to make a healthy version of chicken fried rice. I popped one container of rice in the Best Recirculating Over The Range Microwave and cooked according to package directions. I put 1/2 of chicken strips and 1/2 cup of combined leftover veggies with 1 tsp of soy sauce and warmed it through. I tossed everything together and had a delicious lunch that was ready in minutes and all I needed was a microwave!
