It is very quickly becoming my favorite time of the year. The nights are starting to get short and become cool. I can just start to see the fall foliage begin to turn. I love sweater weather, and scarf, hat and gloves weather!! It is also the slow and quick descent into the Holidays which is really my favorite time of year. I have passed on my love of fall to my precious little girl. She knows when we start seeing pumpkin everything in the store, its getting to our favorite time of the year.
Growing up I always asked and begged my Mom to make a pumpkin pie. She almost never did, because she didn’t like it and no one else did either, but that didn’t keep me from asking. Now my mom was not a make from scratch baker. She is a wonderful cook, but Betty is her best friend when it come to baking. So one year she surprised me by saying she would make me a pumpkin pie, I was about 12 years old and could not believe it! I was so excited! I had my whip cream all ready to dollop on top and when it was dessert time at Thanksgiving that year, I skipped the banana pudding and went straight to the pumpkin pie. I cut a perfect slice, pulled it out of the pan, placed my whipped cream on top and then prepared to dive in. I got the perfect bite all assembled and as my mouth stood open, watering, I began to chew.
But then alarm bells began to go off in my head, and it was a red alert kind of situation that demanded immediate evacuation of the contents of my mouth. What had gone wrong with the delectable pumpkin pie I was promised? My Nanny came in and was headed for the pie, and I whispered to her, ”No, Nanny it tastes awful!” Well my mom had bought pure pumpkin and had put it in a pie shell and baked it. She didn’t buy pumpkin pie filling or add the eggs, sugar and spices to the pure pumpkin to make it filling. We still laugh about this one!
That one bad experience did not deter me from searching out my pumpkin perfection quest. So as the seasons are changing, I began dreaming of the perfect pumpkin smoothie. I still adore pumpkin pie, but hey I am an adult now and I realize that I can’t have pie every day right?? How can I turn my favorite dessert into something I could have on a daily basis without the guilt? The Protein Pumpkin Smoothie was born.
Hannah and I were shopping at Walmart and I came across this new Lightly Sweetened Vanilla Orgain Organic Protein Almond Milk® and it has 10g of protein! I for sure was going to pick some up and add this to my Protein Pumpkin Smoothie! I knew it would bump up my protein and also it would add wonderful smooth vanilla flavor as well. I loved that it is organic but isn’t going to break the bank. I put it in the cart and grabbed a few other items I needed and we headed to the check out so I could go home and further my quest!
I have had almond milk in the past, and trust me when I say this is completely different! Its thicker than most almond milk, and has a nice smooth finish to the taste but not a bad after taste. I can definitely see putting this in rotation to help achieve my daily protein goals. I bought the lightly sweetened vanilla kind and was surprised that even though its lightly sweetened the sugar content per serving was relatively low. I was even more intrigued by this product. As I began to drink my cup more and more, I realized that this truly is “what Almond milk should be.”
I can say that I am hooked.
So in my ninja I placed pumpkin, cottage cheese, greek yogurt, pumpkin pie spice, agave, and Lightly sweetened Vanilla Orgain Organic Protein Almond Milk®. I blended it all together, and man I was in pumpkin pie heaven! I have a proper adult protein smoothie that satisfies my need for pumpkin pie always!!!

Ingredients:
1/2 cup of Greek yogurt
1/4 tsp of cinnamon
1/4 tsp of pumpkin pie spice
1 tbsp of agave
1/2 cup of orgain protein almond milk
3/4 cup of pumpkin (canned)
1/2 cup of cottage cheese
Directions:
In a blender, or in a single serve ninja cup place cottage cheese and pumpkin together and puree until smooth. If it has a little trouble getting going add in the almond milk. Place the rest of the ingredients into the blend and blend until desired consistency. You can add more spice and sweetness to suit your tastebuds! Enjoy!
