This is a SUPER EASY two ingredient pumpkin cookie. I literally couldn’t believe that this was only TWO INGREDIENTS?! A box of spice cake mix and a can of pumpkin. I mean that’s called SIMPLE. I saw a friend recently post this pumpkin cake cookie recipe on her Facebook page and thought, I wonder if those are good. Well I got my answer, YES! They are amazing! I sprinkled a little sugar on the top of them, just to make them look ‘cute’, but they really didn’t need it for taste.
Another great thing about this pumpkin cake cookies recipe, it costs a whopping $4.50 to make!!! My mother-in-law said they would be excellent with a cup of coffee on a Saturday morning. The bottom line this cookie is easy to make, perfect for parties during the holidays and if you love pumpkin they will really hit the spot.

- 1 box of spice cake mix
- 1 can of pumpkin
- sprinkle of sugar on each cookie (optional)
- Combine the can of pumpkin and the box of cake mix together and mix throughly.
- Place on cookie sheet and sprinkle sugar on top (optional)
- Bake at 375 for 10-15 minutes
- Enjoy!

Well, guess what. You can put this in a loaf pan and call it bread, or a muffin tin for muffins. If you are feeling ambitious, throw in nuts and raisins. Great taste for very little effort!
chocolate bits, raisins or cranberries or even white chocolate bits would all be good.

This is even better if you allow them to sit, overnight (12 hours min), then frost with you favorite cream cheese organic frosting homemade or carefully chosen from the crap they have in stores (I mean *really* who puts GUMS in cream?).
Pumpkin is amazing for your eyes and skin, the cake should be organic as should all ingredients – yes, your cells will thank you even if you don’t think so.
