Okay, so it’s just after Christmas and we have a leftover can of pumpkin. I was chatting with my wife and wondering out loud what we could do with it. She had mentioned that she loved the Pumpkin Cake Cookies that we made last month and that we should do something like that again. I HATE to repeat recipes. Unless it’s something that I absolutely can’t live without, LOVE, I don’t like repeating anything. That goes for movies, TV shows, music, I rarely watch things twice. (Yea I know I’m weird).
So when thinking of this recipe, I wanted something fun that Hannah could help with but something a little different that we would all enjoy. What better than pumpkin cake balls, dipped in white chocolate and sprinkled with cinnamon and pearls…um yea! Where do I sign up for this!?
This is a SUPER SIMPLE RECIPE. This involved a spice cake mix, an egg, a can of pumpkin, some white almond bark chocolate found at Walmart and some pearls, that’s IT. No complicated recipe here! It was absolutely delicious and something we plan on doing next year, probably with a new twist!
The cake pop process is pretty straight forward. I would strongly encourage you to get a cake pop pan. It will come in handy time after time, but if you don’t have a cake pop pan, check out this video on how to make cake pops. I just mixed the spice cake mix, the entire can of pumpkin and the egg together. I put the batter into the pan, baked them on 350 for about 7 minutes. Let them cool, then grabbed my candy sticks, coated the tips in chocolate, stuck them into the pops and then froze them for 30-60 minutes. I then melt some chocolate in the microwave, add a little shortening to thin it out and give it a little shine, dip the pops, quickly sprinkle the cinnamon on them and then add pearls. They dry quickly, so make sure to decorate FAST!
That’s it. Hannah had lots of fun helping with this recipe, just make sure to have your decorating supplies READY when you start dipping the pops! Enjoy!
- Spice Cake Mix
- 1 Egg
- 1 Can of Pumpkin
- 1 Package of Almond Bark Chocolate
- 2 tsp of shortening
- Pearls for decoration
- Cinnamon for decoration
- This is simple, detailed instructions are in the post, start by mixing egg, cake mix and pumpkin.
- I use a cake pop pan, if you don't have the pan, follow instructions on how to make cake balls, found in the post.
- Lets the cake pops completely cool.
- Dip candy sticks into melted chocolate and then push them into the pops. This is fun for kids to do. Freeze the pops again for about an hour
- Melt your candy slowly in 30 second increments in the microwave and add a little shortening.
- Dip your cake pops, decorate, and let cool.

Love pumpkin, the only question is would it cook okay in a cake pop maker! I don’t have the trays, but I do have a cake pop maker! Love the recipes planning to make the Nutella cheese cake too!
