How many of us have leftover cans of pumpkin in our pantry sitting there until the next thanksgiving? I know I do, I am one of them, I make pumpkin pie, pumpkin cheesecake, but really what else do you do with pumpkin. Maybe some spice cake muffins? We just generally don’t use canned pumpkin outside of Holiday times. Well I decided to change all of that.
That can be so important when you are having a busy night with everyones hectic schedules. The last thing I want to do is spend all evening cooking and cleaning up.
I decided that I would make a pumpkin soup and spiced with Chili spices and mix in the Perdue Perfect Portions Mesquite Chicken Breasts. There are so many vitamins and minerals in Pumpkin and with added benefits of the chili spices I was very excited to try this new recipe. The other thing that really excited me was that this recipe was really simple and came together really really fast.
That can be so important when you are having a busy night with everyones hectic schedules. The last thing I want to do is spend all evening cooking and cleaning up.
This recipe was a hit with our family, and I am sure you will love this pumpkin soup as well!
- 1 package of Perdue Perfect Portions Mesquite Chicken Breast
- 1 29oz can of pumpkin
- 1 onion
- 2 cups of chicken broth
- 2 tsp of oil
- 1 cup of half and half
- 1 tbs of chili powder
- 1tbs of cumin
- Sautee chicken in oil and with onion in a soup pot.
- When chicken is done, chop and return to pan, adding in all other ingredients except half and half.
- When soup has come to a low boil, remove from heat and stir in half and half.
- Serve with some crusty bread
- Yum!
