I love all things pumpkin. I love when fall arrives and everything explodes into pumpkin! I have shared my story of my Mom’s epic pumpkin pie fail. So when the decent into peppermint happens, I get a little sad, happy. I like peppermint just not to the extent that I love pumpkin.
What I have found is that there is nothing that I love more than baking a pumpkin pie. I like sharing the experience with Hannah, and I love to see her eyes light up, when the pie comes out of the oven. Its hilarious to watch as we wait for the pie to cool before we can cut into it. Of course we never have pumpkin pie without whipped cream. That would be the greatest travesty in our house. But what do you do when you have pumpkin pie leftovers?
I have made pumpkin pie, and bought it through out the years. I have tried different recipes but I can tell you that the one I continue to come back to is Marie Callender’s pumpkin pie. While I love to bake and make most everything from scratch sometimes, especially around the Holidays I just don’t have the time. I love Marie Callender’s pies because i know that no matter which pie option I choose, I can come home, bake it, and have a wonderful dessert ready and waiting on the table after our dinner.
Hannah and I are the only ones in the house that like pumpkin pie. Between the two of us we cannot finish off the whole pie, (even though she would love it if I let her.) So what are the options for saving, or reusing my beloved pumpkin pie? I love Marie Callender’s Pumpkin pie and the last thing I want to happen is to see the pie end up in the trash. So I started to think, how could I save my beloved pie for a treat for a later time? I have the answer, pumpkin pie popsicles.
I took my left over pie, and my Reddi-Wip put it all in the blender, and whizzed it together with a little milk, or cream, or half and half just till its pourable to put into popsicle molds. Just like that you can have your pumpkin pie whenever you want!! You can share them! Better yet, you can bake and take someone a Marie Callender pie and #sharethejoyofpie with your friends and neighbors!

Ingredients:
Pumpkin Pie baked according to box directions
1 can of Reddi-Wip
1 1/2 cups of milk
Directions:
In a blender or food processor blend entire pie, and entire contents of Reddi-wip can together and thin out just until its pourable with milk. Pour into popsicle molds and freeze until firm. Enjoy!
