The hustle and bustle of fall, back to school season, it seems like everything gets more busy right? Everything, takes a break during the summer, even t.v. and now your favorite shows will be returning likely very soon. Its tough I think the first few weeks of the fall to get back into the routine we all happily jumped out of the moment school was out. I mean as parents (unless you are a teacher) the work doesn’t stop, its year round but we happily stay up later and drag ourselves out of bed in the mornings. I think it’s the moment the days start getting longer we feel a sense of freedom, the need to get out of doors. But it can catch up to us.
One thing that seems to suffer is dinner. How many times have you found yourself at the end of a busy day saying, “I don’t want to cook!!!” So you either pilfer through 2-day old left overs or find yourself eating take out or drive-thru food. But then the inevitable guilt sets in, you know the guilt where you desire to spend more time with your family at the dinner table? But to do all the work that it takes to get there seems astronomical at times. There has got to be a better solution to weeknight dinner that doesn’t involve a drive-thru!
As I have stated many times before we frequently shop at Walmart. So, one afternoon after work I stopped by Walmart to pick up a few items that we needed at home, and as I was walking by the deli I noticed a sign, that said Effortless Meal Solutions. There were a few different options including a Marketside Rotisserie Chicken, a 2lb side and a 2-Liter of Coca-Cola. You could also get a 16” pepperoni or cheese pizza and a 2-Liter of Coca-Cola, both of these meal options would cost you $9.40. This was really a no brainer, it had been a particularly long day at work and there are always leftovers when we have rotisserie and I knew that my family would enjoy this Rotisserie Chicken Effortless Meal. I picked up the chicken, 2lb coleslaw side and grabbed a bottle of coke and dinner was done! How awesome is that?!?!?
I arrived home with dinner in hand and we sat down at the table, no guilt tonight!! We laughed and talked and clean up was a breeze! If you are in need of a delicious, quick dinner then head on over to Walmart and pick up an effortless meal today and get back to the dinner table! Spending more time with my family is a must and critical for my mental and emotional well being. Tonight with effortless meals we fulfilled that need, and got to make the most of our evening.
I generally take leftovers to work the next day. So as my wife was breaking down the rest of the chicken and getting the meat that was left. She told me that she thought she had enough chicken left to make everyone Santa Fe Chicken Salad. I liked the idea and was intrigued but I was most impressed that we were going to be able to get two meals out of this one chicken that I had purchased.
I ran to the pantry and took out some spices that my wife needed and she continued to shred the chicken. We added some spices, and some corn, black beans, peppers and onions, this second meal was coming together! I stirred in some sour cream and cilantro and put it all on a whole wheat tortilla. I was able to make about 3 for our lunches for the next day all from the chicken I purchased for dinner that night. Now of course it all depends on how much chicken your have left over, but I was still super impressed!
Stop by Walmart and pick up an effortless meal tonight and give the Santa Fe Chicken Salad a try!
Ingredients:
6-8oz Pulled Chicken from the Rotisserie
½ tsp of cumin
1 tbs of chopped cilantro
½ tsp of garlic powder
½ cup of mixture of corn, black beans, peppers and onions
¼ cup of sour cream (add more if you like your chicken salad more wet)
whole wheat tortillas (or your favorite kind)
salt and pepper to taste
Directions:
- Pull remaining chicken from the bone, and shred with fingers or you can dice with a knife
- Add in the spices and mix thoroughly
- Gently fold in the sour cream and veggies
- Top with chopped cilantro
- Wrap in your favorite tortilla
- Enjoy!
We are going to be very pressed for time when school starts next week! I’m pretty sure I’ll have that blank stare more than a few times when I realize my plan for dinner might not work out. It’s nice to know there are a number of great Effortless Meals options at Walmart! #client
