It’s the start of the new year. It’s time for all things to begin again. It’s a new year filled with endless possibilities. You are gonna be flooded with hey let’s get healthy campaigns. Let’s face it we indulge during the holidays. As our waistlines increase we begin to feel all those extra cookies. So as the New Year approaches it’s time to reset and start the year off right.
With all of the diets trends out there it can be overwhelming to know where to start. Eat this, don’t eat that. Too much information is enough to make you want to throw in the towel before you begin. For me I find the best course of action is to start by taking baby steps. Choosing real whole foods and leaving the processed junk by the wayside. By making the next good choice when you eat, you can put yourself on a healthy track.
Begin your healthy track with one of my favorite healthy salads that is loaded with plenty of lean protein and packed full with veggies and delicious flavors. This Southwest Pork Salad is a great way to start off the New Year right! It uses a lean pork loin rubbed with some aromatic spices and cooked to perfection.
Sliced pork tops greens, corn, black beans and tomatoes with a drizzle of a yogurt salsa dressing make this a great meal! Pork is a misunderstood meat! Ingredients:
1 1/2lb Pork loin
2tsp salt
2tsp of pepper
2 tsp of chili powder
2tsp of cumin
Romaine lettuce
3 sliced carrots
1 can of black beans
1 can of corn
1 sliced orange pepper
1 sliced red pepper
10 halved cherry tomatoes
1 avocado sliced
1/2 cup of plain yogurt
1 tbs of salsa
1 cup of broth
Directions:
Coat tenderloin in spices. Cook the tenderloin on 350 degrees until internal temp is 145. I place a cup of broth in the bottom of pan to keep the meat moist. Place all other ingredient in the bowl and toss. Top with pork. Enjoy!
