Life seems to be so fast-paced. We try and slow down, and make life work around us, but it’s often us fighting, running to catch up with life. I look forward to spring break when the bustle slows down a bit. This of course means that Hannah will be home all day and try to eat us out of house and home. So, really, we are trading one thing for another. But what is the answer to family dinners when we are all so busy? Or those days, dare I say, that I am just over cooking? Yes, there I said it. The food blogger sometimes gets tired of cooking. LOL. I love what I do, but sometimes I want the quick and easy option, too. The question then becomes, how do I get my quick and easy fix without it being from a drive-thru window?
Our society has made millions out of the convenient foods, but we all know those foods are often not the best for our family. I really want to give my family great food that is good for them and easy for me to make. So as spring break comes, and inevitably summer break, I like to make a list of things that I know I can make ahead and freeze, or that are easy to grab-and-go. Hannah is at the age where she can microwave – I don’t let her cook on the stove without supervision yet, but she can responsibly microwave. She is quite capable of getting a bowl or a plate and putting food in the vessel and pressing start on the microwave. Self-sufficiency is liberating for you and them! If I make good lean, veggie-filled meals ahead of time, then I know whatever she is warming is going to be good for her.
With warmer weather comes more outside activities and sports. While the hustle and bustle of school may have died down, we all want to be outside more. The more we move, the more wholesome, sustained strength we need for whatever life brings our way. For me, I want food that tastes good and is going to keep me satisfied as I sit through softball games. One of the most versatile meals I have found that you can literally turn into anything and flavor however your heart desires are meatballs.

Meatballs are perfect to feed a crowd or to make ahead and pop into the freezer. The biggest reason I love them is because I can hide all the veggies I want and my hubby will never know. LOL. You can choose from a variety of ingredients to go in them, but I choose beef for mine every time.

I made these Spicy Asian Beef Meatballs because I wanted something different. I knew I wanted to incorporate lean beef, 93/7, and have it be super tasty. Let’s face it, if it doesn’t taste good we won’t eat it. The lean beef can also go a long way to keep us all satisfied. Many times with our recipes, just a few tweaks can turn a classic family favorite into a healthier meal. That’s what I did with this recipe. I added in a whole bunch of scallions, which are good sources of vitamins A and K. Adding in the fresh garlic and fresh ginger also amps up the nutritional value. Garlic contains vitamins C, B6, manganese, selenium and other antioxidants. Ginger is a powerhouse, it is an anti-inflammatory and has many antioxidants, as well. So you can see by adding all these ingredients together, the meatballs provide a lot of flavor and an easy meal that is also good for us.
The trick to keeping these meatballs better-for-you is using whole wheat bread, low-fat milk, egg whites and measuring any other seasoning. I used Hoisin sauce, chili paste, soy sauce and a little sesame oil. These are really gonna ramp up the flavor, and you don’t need a lot, but if you don’t measure it’s easy to add more calories and take this from a healthy meal to one that isn’t. These meatballs were fantastic. We cooked them in the oven so they were easy to prepare as well. I didn’t have to fuss over them at the stove or a deep fryer. While you are making these, go ahead and plan to make extra as they freeze amazingly well. So, on those nights that you are busy or just don’t want to cook, you can pull these out of the freezer and have a quick, satisfying and healthy meal. Spicy Asian Beef Meatballs
1lb of 93/7 lean ground beef
2 egg whites
1 inch knob of fresh ginger
4 cloves of garlic
1 bunch of green onions
1 tbs of chili paste
2 tbs of soy sauce
2 tbs of hoisin sauce
1 1/2 tsp of sesame oil
1 piece of whole wheat bread
1/2 cup of low fat milk
In a large bowl break up bread and add milk. Work bread and milk together with no visible big chunks left. Add in all the sauces and the sesame oil, stir to combine. Add in the egg whites. Add in the chopped ginger, chopped garlic, chopped green onions, and mix it well with other ingredients. Then add in the ground beef. Careful not to overwork the beef, mix all the ingredients together thoroughly. Form into 12 or more similar size meatballs. Cook in the oven on a sheet pan at 350 degrees for 20-25 minutes or until done. Enjoy!
