Life, it seems to move faster every year. You go along with the day-to-day routine and everything eventually can become autopilot and even mundane. Now don’t get me wrong there’s a certain synergy to routines and auto pilot. But I get bored with the mundane. That mundane way seems to spill over into all aspects of life including dinner.
But what do you do when your weeknights seem to get busier and busier? I need to get dinner done in a hurry so we can actually manage 15 min together at the table. I also want to ale sure that I am giving/ feeding my family nutritious food that is going to fuel their bodies for the evening ahead and the day to come. Many times my go to quick dinner is a sandwich.
What makes a really good sandwich? It’s hands down the bread. If you start with a good quality bread your sandwich will be off to a really great start. My favorite go to bread it La Brea Bakery Telera Rolls. I was shopping at my local Kroger and I found them in the bread section and I noticed that they were take and bake. I take them home and pop them into the oven for 3-5 minutes and they would be ready for filling. Now this week was especially short on time. I knew this going into this week and so I pre-cooked some chicken breast so they would be ready to go for a dinner or an easy lunch. You of course could buy pre-cooked chicken breast as well. I bought the rolls and took them home. I knew I wanted to make some avocado relish chicken sandwiches. With a few fresh ingredients that I could throw together a delish sandwich that is fast and nutritious.
When I picked up Hannah from school it was one errand or activity after the other. When we all finally got home I didn’t want to spend all evening in the kitchens so grabbed the La Brea Bakery Telera rolls and placed them in the oven. I began making my relish and popped my pre-cooked chicken into the microwave to warm through and I fixed my avocado and chopped a few veggies and some cilantro. The timer beeped for the rolls and I pulled them out of the oven. Mmmmmmm nothing smells better in the house than the smell of fresh baking bread, no other smell makes you feel more at home, comforted. I sliced them and placed a piece of chicken on each bun. Topping it with my avocado relish I closed each steaming bun and placed them on plates and dinner was on the table in less than 15 min.
This recipe is a definite crowd pleaser. The thing that sends this sandwich over the top is the delicious Telera rolls. They come out of the oven quickly, and are crusty on the outside and soft on the inside. The pillowy pockets inside are ready to accept and hold any flavor you add to it and really are the perfect sandwich vehicle. Avocado Relish
Ingredients:
1 Medium Tomato
2 Avocados
1 small bunch of Cilantro
½ tsp of salt
1 small onion
½ cup of black beans
½ cup of corn
4-5 garlic cloves
1 deseeded jalapeño
½ tsp of lime juice
Directions:
Dice the onion, jalapeño, tomato and garlic, placing into a mixing bowl. Add in the rest of the ingredients and gently fold together. Chop the cilantro and gently stir in as well. Put this mixture on top of chicken breast that have already been cooked, and assemble with warm La Brea Bakery Telera rolls. Enjoy!
